Recipe for you! [2008-12-01]
Buckeyes
2 cups peanut butter
1 stick margarine, melted
3 cups sifted confectioners sugar
16 ounces chocolate chips
1/3 bar paraffin wax
In a large bowl combine the peanut butter, margarine and confectioners sugar and mix well. Chill, form into walnut size balls. Melt chocolate chips and paraffin in a double boiler. Dip balls into chocolate mixture to coat. Place on wax paper until firm.

I'm sure you can look it up on her website. I have her cookbook and have been using her recipe for years! It's not fool proof, as I have found that fresh eggs don't peel as well but do peel a little better if I use her method and I NEVER get that green ring or the dot of slimy uncooked egg when I use her recipe. It's very simple too. I wish I knew it exactly from memory but I don't - the closest that I can come is this (though if you want to try it I would pull her recipe and not use mine from memory lol)
Start eggs in cold water. Put on the stove. Bring to a boil. Heavily salt the water (1-2 tablespoons for a normal sized 1 quart sauce pan). Cook 7 minutes. Turn heat off and let stand for 5 minutes. Place into ice water. Peel under running water. Then you can store them peeled with wet paper towel in a zip top baggie or platic tightly covered dish for a few days if needed.

12 oz. pkg. butterscotch chips12 oz. jar peanut butter9 oz. can chow mein noodles
Melt chips in a saucepan, add peanut butter and remove from heat. Stir well. Add chow mein noodles. Drop by spoonfuls onto waxed paper.

Check Alton Brown's website for recipes. I am a pretty good cook and make Christmas cookies for all of our neighbors and friends every year. Cookies or not, if there is something that I just can't seem to pull off I go to Alton Brown. I have not found a recipe of his that hasn't worked for me yet. It took me 15 years to make a pie crust but I was only able to do it well with Alton Brown's recipe.
I know he also has some recipes where you can make 1 dough and then divide it to make 4 different cookies. I think his black-and-white cookie is that way. Also, marshmellows are not difficult to make but they are so impressive and everyone loves them! It's a little messy with all the powdered sugar but the kids LOVE to make them. Its minimal ingredients and its like a science project when it grows in the mixer. You can also get extracts and make mint marshmellows, strawberry, whatever you want. They go great with hot chocolate. Actually I think this year we are only doing those and sugar cookies because everyone loved them so much the last few years. and maybe some fudge, to give me an excuse to make it. lol

I would set the oven at about 350-375 degrees, no higher or lower, I add everything at once, the apple juice, the butter, etc., and cover with foil just so it wonnuke it on TDay to warm it up. My refrigerator will not hold all this stuff plus the turkey -- that I do a lot the night before or day before now, as I find if soaked in water on the stove, it isn't harming anyone, then just turn the heat on and cook, or even cook the night before, smash it up and nuke it to warm it up. It's all about SPACE!

I think part of the reason we order in/eat out so much is because I get tired of the same thing. It seems everytime we have chicken in the winter, it Same with ham and turkey. I only had a few minutes on this website, but I was really surprised how easy chicken kiev is to make.

I found this online and it It also includes the directions and the pricing comparisons included are also very similar to prices in my area.
The only difference is, in my part of the country, Arm Hammer wash soda isn't common on the store shelves and I have to order it online.
Since one of the kiddos is sensitive to perfumes, I will sometimes divide part of one batch into a couple of smaller bottles and add a drop or two of lavender essential oils just for the master bathroom towels and bedsheets.

Another was these little homemade french bread pizzas. Also sloppy joes can be made and wrapped in aluminum foil and frozen and put in the oven frozen still wrapped in the sluminum foil at 350 for 35 or so minutes. There were so many things.

I use 1 small can of tomatoes, whole or chopped but without seasoning, 1/2 green bell pepper, 1/4 onion, 2 cloves of garlic (or powder in a pinch), 1 packet of salsa seasoning mix from the grocery store (I haven't found one that I don't like), and if I have it I add a little lime juice (about 1 tablespoon of juice) and a tablespoon of dried cilantro. Add hot sauce or jalepenos if you like. You can chop it as chunky or smooth as you like using food processor or blender. We like it fairly smooth.
I keep the chopped onions and bell peppers in the freezer so I always have them and the seasoning mixes go on sale a couple times a year at the grocery store (3/$1) and I stock up on those. This is always what I am asked to bring to parties and gatherings. For some reason even kids who don't like salsa like it - haven't found a kid yet who doesn't like it. It's great because I can keep everything on hand and it takes about 5 minutes to make.

I make these every year. [2008-12-01]
After making the peanut butter part I put the balls in the freezer to get hard. This also makes the chocolate coating a little thicker which my family likes. After dipping in chocolate they return to the freezer. Once hard I put them in air tight containers or ziploc bags and store in the freezer. They come back to room temp very nicely or you can eat them frozen which my son likes. I have had them in my freezer for about 3 months before and they have been just like the day I made them. Of course I usually have to hide them well if I want them to last more than a week. :)
I use regular chocolate chips and about a 1/2 inch square of parafin to 1 bag. How many bags, depends on the recipe. I usually make a huge batch when I make these but I think the standard recipe is 1 bag.
Oh, I have also found it easier to make if you stiffen the peanut butter mixture up a little with extra powdered sugar. When short on time, I have even mixed enough powder sugar to be able to roll without refridgerating first.
If you want a little twist on tradition, they are great to add a cashew or peanut inside the ball or mix in cereal to the peanut butter mixture, rice crispies are yummy.

I keep everything chopped and frozen except for the canned tomatoes. I buy a packet of salsa seasoning at the grocery store for ease and I can usually find it on sale for 33cents and stock up.
1 large bell pepper
1/2 a medium onion
1 large can of tomatoes (chopped or whole but no seasoning)
1 large garlic clove or garlic powder
I add a squirt of lime juice (if I have it) and black pepper. Then a packet of seasoning mix and some dried about 2 teaspoons of dried cilantro (if I have it). Keep it chunky or blend it/food process it to the texture you like. We like it pretty smooth. I add Tabasco sauce to taste for heat. Less than 5 minutes preparation and it is the thing that everyone now asks me to bring to parties and gatherings. :) Enjoy!

I hear that I am a good candy maker and my secret is I don I eyeball everything! Lazy! So the measurements I give are kind of guesses... but you can look up recipe for buckeye candy too. We changed the name of ours to bug eyes because they kind of looked like bulging out bug eyes
Peanut Butter - approx 2-3 cups. I use Skippy Honey Nut. In a household taste test with another regular brand this got higher review. Definitely go for a creamy kind and don't use all natural.
3-4 cups powdered sugar (I specifically remember the recipe called for 3, but when I looked in the box there was not that much sugar left in there, so I dumped it in. So basically one whole box of powdered sugar)
2 sticks butter
1 package of chocolate chips. I I think the recipe was actually for those melting choc chips, but I think those don
Beat BP and 1 stick softened butter in very large bowl until PB is really creamy then slowly add in sugar until it seems to hold together well enough to form balls. I say slowly on adding in the sugar so you can stop whenyou can make good balls that are moist and not crumbly. Probably about 1-inch size balls or so. Use waxed paper on a baking sheet and stick in the freezer for about an hour.
When hour is up, melt chocolate and about half of the other stick of butter together in pot on stove. You can microwave but I think slowly stirring over the stove is easier to monitor. When all of the chips have melted together, you are done.
Don I put tiny slivers of unmelted chocolate in the middle of the uncovered part to look like pupils. Keep in fridge until set.
I hope someone enjoys. This is probably a very common recipe, and like I said you can probably find it somewhere with real measurements!. But it is so easy, one of those ones I can make without looking at the instructions over and over and everyone loves. I cannot wait to make them, after typing about it!

My butternut squash sm [2008-11-24]
After the squash is peeled and cut in squares, I put them in a glass baking dish, add about a half stick of butter (I use a lot of butter on Thanksgiving), dot the squash well, according to size of the dish of squash (you may need more) and add a cup of apple juice (add more if larger dish of squash) and cover the dish with foil until soft, I also add some cinnamon and brown sugar, however, I now have someone who hates cinnamon, so I have to adjust the recipe to please all. You can also cook them the same as you do your potatoes and mash them, add butter and seasoning, but they are a bit watery and my family prefers them baked with the apple juice and the little spice I mentioned. I use brown sugar, cinnamon and butter in some of my vegetables such as the squash and carrots (I call them candied carrots) but as the family grows, you have to please all and that sometimes means changing up the things you add. I have one guest now who canon Turkey Day.Happy Thanksgiving!

My kids loved it all, then they turnedorganic andvegan, etc., their kids are fussier than they were, but they don cheese. Funny, as I was food shopping yesterday, one little girl was screaming at her mom to buy some Kraft mac cheese, the orange kind. So I guess theyYuckkkk! they say.There is just so much room for all these different offerings. Peas are out! You're right it's only one day and I'm only the grandmother so they will eat again at home at night.
Alton Brown's "The Chewy" [2008-11-24]
I've tried all of the chewy chocolate chip recipes out there, and this is the best by far. The recipe calls for giant cookies, but for Christmas, I make them mini-sized, using about 1 heaping teaspoon of dough per cookie. They bake faster, so watch them carefully. I also add pecans to the recipe. I've made them with bittersweet chocolate chips and macadamia nuts, too, and those were INCREDIBLE.
Be sure, however, to really take your time creaming the butter and sugars. And let the melted butter cool to room temperature before mixing with the sugar. The creamed butter and sugar should be thick and fluffy and smooth, almost but not quite peanut butter consistency. If it's not, the cookies will go flop when they come out of the oven, and they don't look as pretty. They still taste great, but they aren't high and pretty.

and one of the recipes that we love and is really simple is the No-Bake Cookies. That's what we called them when I made them (all the time!) as a kid. Also called Refrigerator Cookies, and the recipe I use today, from a cookbook my Mamama gave me that her church put together, calls them Quick Fudge, I believe. I call them Chocolate-Oatmeal-Peanut Butter Yum-Yums. They are made with sugar, butter, and cocoa boiled, then add the peanut butter, quick oats, and vanilla, dropped on waxed paper and cooled, then chilled in the fridge. If you want to make them post here and I'll grab the recipe tomorrow to give the quantities.
Also, I absolutely love Pine Bark, and it is very easy to make as well. Lots of recipes for that on-line.

A smore's kit is nice to make or homemade marshmellows (they are not that difficult to make as most people think) with homemade hot chocolate mix and some cute mugs.
Also made fleece throws for everyone for xmas one year. YOu can get the no-sew fleece and just cut a fringe around the edge to finish it.
Offer up a free baby sitting night to the parents, all you need is a card. Tuck it in the tree with their name on it.
If there is something special that you make that someone likes you can make up a basket with many of the ingredients and include the recipe card. If it is cookies or something nonperishable you can include a finished version in the basket.

First of all, relax. You need to go to a doctor and get on an antidepressant? No insurance? If you can get the money to go to the doc for one visit, you can get them to prescribe an antidepressant that is on Walmart's $4 list and get it for $4 a month. Call United Way and see if they can direct you where to get help with your rent. Don't worry about whether or not you have cable, you'll be okay without that unless you need it for your job? Don't worry about not being able to give Christmas gifts...just explain that you don't have the money. People will understand and your grandson can have it explained to him. I have the same isolation issues that you do because of the job. Can you go to a temp agency and see about getting a job outside of your house so you can be around people more? There is a website called Exercisefriends.com where you can meet people in your area who want exercise buddies, maybe just someone who is starting out trying to walk every day or something like that (not sure what your fitness level is). Or advertise on Craigslist for a walking buddy (but be careful of course when first meeting the person). I met one of my best friends this way and have known her for 4 years now. If you want an email buddy feel free to email me. I think everyone is struggling right now and it is hard. I would be happy to have you vent to me via email all you want. :-)

We did a movie pack for my brother-in-law and sister-in-law last year. I found a plastic popcorn bucket at the $1 store and wal-mart had candy in the boxes (like at the movies) for a $1. Turned out to be a very cute gift if I do say so myself. We through the giftcard in there instead of buying a $3 card to go along with the giftcard.
Halfway homemade NE clam chowder sm [2008-11-19]
I say half-way because I use cream of potato soup as kind ofa base.This is enough for my family of 5 to have plenty with a little leftover if there is nothing else to go with it (we sometimes have grilled cheese with it).
6-8 slices of bacon
1/2-1 stick of butter
1/2 medium-large onion, chopped
1-2 Tbsp minced garlic
4 cans Campbell's cream of potato soup
3 cans minced or chopped clams (keep the juice)
Half and half, maybe a quart
Cook the bacon, butter, onion, and garlic in a large pot until the bacon is done. Do not drain. Add soup and clams, including the juice, and gradually stir in half and half, stirring constantly to keep it from curdling or burning, until heated through.

I have three siblings, with spouses and children. Not only is it expensive to buy for all of them, but it Last year I went to a craft store and bought cheap baskets on sale. I bought each of them a 2-month subscription to the movies that you get through the mail,NetFlix (can do Blockbuster if you want). I put the gift certificate in the basket along with the big boxes of candy that they sell at the show (.99 cents apiece at Walgreens), a few packets of microwave popcorn, and a 6-pack of their favorite soda. They loved it and everybody enjoyed the movies over the next couple of cold winter months. You can purchase the movie gift certificates on line at their website.

Season with lots ofminced garlic and a little dill weed (maybea teaspoon).I slice in a couple of things ofcelery or sliced celeryhearts with leaves. I'm in Florida and spend about $175/wk for 5 sm [2008-11-18]
I5 and 158 lbs,eats more than my husband, who is 6 and 345 lbs. FIL had to have a feeding tube put in last July, and I had to cut down meals by half because we were having so many leftovers and wasting money. Just when I thought I had it figured out, he was able to get the tube removed, so II donwe (FIL and I) will just eat a sandwich or leftovers from the fridge
As far as special foods, we dona recipe, and for a while we were buying meat ata butcher shop but have had to cut that out for now. It was really good but was close to DH's work, and if he couldn't pick it up while he was in the area, it was a 45-minute drive. I cook most things from scratch, except lasagna because I hate making it. Once a month, we have a luncheon at church that I bring a dish and a dessert, and I cook Wednesday night dinner there one night per month, but I get reimbursed for the Wednesday night dinner. I do include paper products and toiletries in with my grocery budget but that's it, and I usually go to Sam's once a month for those.
I have it easy compared to my parents though. My dad got paid once a month, and there were 4 kids at home all the time, 5 when my sister came up during the summer. They used to have 3 grocery carts slap full of food, and my mom figured out that it took something like 18 boxes of cereal to last a month, each one with a date marked on it so we didnWe also hada freezer to keep extra bread and other things, and my mom also used to mix in powdered milk when the gallon was half-way gone. I never knew until I was grown, so she definitely blended it well.
