You can complete the general ed portion of your education online?  Most colleges/universities have that option now.  Of course, you will have to take some science classes that have on-campus lab requirements, but those can be done maybe 2 days a week, and they usually have on-site daycare.  Honestly, that is the route I would take while my kids were small.  Take your basics online for 2 years and then switch to on-campus classes thereafter.
