I would backpack and kayak.

I would probably backpack the Appalachian Trail, or a sea-to-sea trail or try the Pacific Crest Trail. I'd go camping in Canada, and the very last thing I'd like to do is set eyes on New Mexico again before I die. I've never seen a place more beautiful or spent a better night under the stars that I did while camping there two summers ago. And along the way, whenever possible, I'd put my butt in a kayak and paddle wherever I could.
In short, I'd Get Outside!

Not sure what city you are in, but we use Allegiant Air (www.allegiantair.com).  They fly from many mid-sized cities to Las Vegas for $99-129 or so each way. 


Also check www.kayak.com and plug in your dates there.  It compares 20+ travel cites


I've been told by some people in the travel business to NOT book at package deal.  Usually you can get a better deal from the hotel itself, and if their rates go down after you've booked, they will usually honor their new lower price for you.  Good luck!
