Trust me on this. This will work EVERY time unless you continue to give in. Put down a variety of CAT food (meaning one can of wet and one bowl of dry) and offer nothing else. No gravy, no baby food (please reserve that for when and if the kitty really does have something wrong with it), nothing but CAT food that comes from the store. Do not keep changing the varieties either. I have had cats for over 25 years and have seen some of mine try that nonsense yours is trying with you. Unless there is some medical reason that he cannot actually eat the food, leave it down until he eats it. He WILL eat. Do not go running around trying new foods every 5 minutes. They eventually WILL eat what is put down. Cats need cat food, not people food, not anything else unless something is determined to be medically wrong with them. Some cats will try to wrap you around their paw regarding their food choices. Mine are spoiled rotten, but unless they are medically ill they get only cat food. No problems with any of them being underweight and they are all very happy inside monsters. Trust me on this. Stay strong. Let us know how this tough love works.
