Open word. Change to 125%. Go to Tools, Options, Save. Put a checkmark in "Prompt to save normal template." Close Word. When it tells you changes have been made to normal dot and asks if you want to save changes, say yes. When you open Word from now on, it will be at 125%.

You can then go back and take that checkmark out so that you don't get prompted to save changes each time if you don't want that prompt popping up each time you close.

It will still keep that change you made though so you'll open at 125% each time.
