If it is verbatim then I guess you have to transcribe as it.  I don't think most folks care whether they say black or white, Asian, African-American, etc.  BUT...My Japanese friend informs me that "Oriental" is a rug, not a person, so if not verbatim I definitely use Asian. 


I was born in Scotland and so am "Scottish," but often hear "Scotch," like Oriental is a rug, Scotch is a whiskey!!  Not crucial to anything, just annoying, especially when people tell me that they are "Scotch"  !!  ...lol...


I don't like Afro-American -- don't know why, just don't, but will use it on a verbatim account.
