Page 367 for ethnicity, hyphen no longer necessary (or preferred) for either noun or adjective, African American man, Asian American, etc.  Page 18, hyphen, age, e.g. 33-year-old woman, which comes before a noun, or if the noun is implied, e.g. He is a 33-year-old.  Not sure about the bright red blood, but I usually don't use hyphen, like in bright red blood per rectum.
