I have found that if the eggs are in my fridge for atleast a week, they seem to peel just fine. Often if I'm at 1/2 a dozen and I know I'm going to the store, I will buy another dozen out of convenience and hard boil the 1/2 dozen when I get home. Just seems to be my experience.
