Mexican crockpot

1 lb ground beef


1 lb Velveeta, cubed


1 small onion, chopped


1 can Ro-Tel


1 can Ranch Style Beans


1 can chili with no beans


8 oz sour cream


Brown ground beef and onions; drain. Combine remaining ingredients except for sour cream in crockpot and stir. Cook on low for 4 hours. Just before serving, stir in sour cream.


When we make this, we serve it over rice with taco style toppings, but it can also be used as a really great dip. It's always a hit at potlucks for me.

Ingredients:
3/4 cup apricot preserves
1/4 cup prepared yellow mustard
2 scallions -- chopped
1/2 pound precooked mini smoked sausages

Directions: Combine all ingredients in crockpot. Cover; cook on low for 4 hours.

Breakfast in the crockpot

Crockpot Breakfast Strata
Great for Easter morning!


Load up the crockpot the night before and wake up to an easy breakfast.
 
12 eggs


1 cup milk
1/2 teaspoon dry mustard
salt and pepper
1 lb bacon, cut into small pieces -cooked and drained
1 (32 ounce) bag frozen hash brown potatoes
1/2 cup onions, diced
3/4 lb shredded cheddar cheese
 
Layer the ingredients in your crockpot in this order.
 
1/2 of the potatoes- on the bottom.
1/2 of the bacon.
1/2 of the onions.
1/2 of the cheese.
potatoes.
bacon.
onions.
cheese.
 
Beat the eggs, milk, mustard, salt and pepper together. Pour this over the whole mixture.
 
Cook on low for 10 to 12 hours. 10 servings

Mine is:


CROCKPOT LASAGNA

1 lb. hamburger
26-28 oz. spaghetti sauce
8 oz. tomato sauce
9 oz. (8) lasagna noodles
1 lb. jar alfredo sauce
12 oz. shredded Mozzarella cheese
1/4 c. parmesan cheese

Brown hamburger in skillet and drain. Spray crockpot with cooking spray. Spread 3/4 c. spaghetti sauce in bottom of crockpot. Stir remaining spaghetti sauce and tomato sauce into hamburger. Layer 3 lasagna noodles over the sauce, break noodles if necessary. Top with 1/3 of the alfredo sauce, spreading evenly. Sprinkle with 1 c. of Mozzarella cheese. Top with 1/3 of hamburger mixture, spreading evenly. Repeat layering twice, using 2 noodles in the last layer, sprinkle parmesan on top. Cook on low 3-1/2 to 4-1/2 hours. Cut into wedges. Makes 8 servings.

You don't have to boil the noodles.

we will be camping all weekend so i'd rather put something together in a crockpot and let it cook while i am having fun.  any good recipe ideas for family reunion?  main course to side dishes to desserts.

Mexican Chicken soup
Ingredients
2 tablespoons canola oil
1 medium onion, chopped
1 medium rib celery, chopped
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon ground cumin
6 cups chicken broth, low-sodium canned
1/4 cup canned green chiles
1 (15 1/2-ounce) can posole, drained or frozen corn kernels
4 canned whole peeled tomatoes, roughly chopped
1 teaspoon dried oregano
1 cup cooked skinless shredded chicken breast (about 4 ounces)
1/4 cup chopped fresh cilantro leaves
Juice of 1 lime
Kosher salt and freshly ground black pepper
Directions
Heat the oil in a medium saucepan over medium heat. Add the onion, celery, garlic, chili powder, and cumin, and cook until the onion softens, about 5 minutes. Add the chicken broth, bring to a boil, reduce the heat slightly, and simmer, uncovered, for 10 minutes. Add the green chiles, posole, tomatoes, and oregano and cook for another 5 minutes.

Pull the saucepan from the heat and stir in the chicken, cilantro leaves, and lime juice. Season, to taste, with salt and pepper. Serve hot.

I normally buy 2 of the already roasted chickens at the store (Wal-mart) and eat most of one chicken for dinner and then use the leftovers as well as the next chicken for the soup, I know that is more chicken than what is called for, but it just really makes for a wonderful soup. I don't always have cilantro on hand so I usually leave that out. Also, for the whole tomatoes, I usually use a large can of crushed tomatoes. Sometimes the soup is a little to thin so I might throw in a handful of instant rice. My family can't get enough of it.
I love Mexican food, but sometimes I
make my own or other stuff and make my own TV dinners. Chicken pot pie sounds good with the cooler weather. Could also pick up a presmoked presliced brisket or ribs and heat in the crock pot. Have the recipe for Wendy's chili which I make (TopSecretRecipes.com).

who moved in a trailer who moved on the same 10 acres I live on. The land doesn't belong to me so it wasn't up to me whether or not she lived there. Anyways she took it upon herself to give my address as her own. Her mail started coming to my box. Never asked or nothing. Then she would go check the mail in MY box and sometimes my sales papers would go missing and such. Didn't like it at all. I started making sure I got the mail first and not giving her her mail. She would come ask if she had mail and I would say no you sure don't. I think she got the point. She doesn't get mail at my box anymore. LOL Got rid of that problem.
