EASY BRUNSWICK STEW    (approximately  $20 bucks but you can split and freeze.)  I like to give this when people have surgery and other emergencies, easy for hubbies or kids to open, mix and heat.  Taste like you spent all day making it.


 


1 1 pound can Castleberry's Brunswick Stew
1 can Castleberry's pork barbecue
1 can Castleberry's chicken barbecue


(SueBee bbq chicken or double pork or beef)
1 can Castleberry's beef barbecue
1 can cream-style corn
1 small can English peas


1 small can green butterbeans


1 can diced potatoes.


1 tbsp Worcestershire sauce


1 small bottle ketchup


1/8 cup vinegar


Hot sauce optional.


Salt & pepper to taste.



Heat about 20-30 minutes, stirring often.  I put this in Glad bowls and freeze, then pop out into ziplock bags, great for packing lunches just pop back in a Glad bowl and heat.


CUBED STEAK CASSEROLE



  • 4 pieces cubed steak
  • 3 medium potatoes, sliced
  • 3 carrots, sliced
  • 1 medium onion, sliced
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 3 to 4 tablespoons butter

Layer the cube steak, potatoes, carrots, and onion in a casserole dish. Heat soups with butter then pour over the first four ingredients. Cover and bake for about 60 minutes at 375°.


 


SKILLET CUBED STEAK WITH TOMATOE SAUCE



  • 4 cube steaks
  • salt,pepper,garlic powder
  • small can of tomato sauce
  • small can and a half of water
  • chopped cilantro(as much as you like)
  • slivered jalapeno(as much as you like)

CUBED STEAK STEW


First salt and pepper steaks and brown in a little oil. Add remaining ingredients; cover and simmer over low heat until sauce has a gravy-like consistency, about 20 minutes.



  • 1 tablespoon vegetable oil
  • 1 1/2 pounds cube steak, cut into bite-sized pieces (or use tenderized round steak)
  • 1 cup chopped onion
  • 1 tablespoon red wine or cider vinegar
  • 2 cans (16oz each) small new potatoes
  • 2 cans whole kernel corn, drained
  • 1 package mushroom gravy mix
  • 1/4 cup water or broth
  • salt and pepper to taste

In a skillet over medium high heat, brown the beef and onions quickly in hot oil. Transfer to the Crock Pot; add vinegar to skillet and scrape browned bits up with a spatula; add to Crock Pot. Add potatoes and corn, then sprinkle with gravy mix; pour water over all and mix to combine.  Cover and cook on low for 7 to 9 hours. Taste and adjust seasonings.  Serves 4 to 6.


 


Discovered a first the other day in grocery store, Reynolds brand crock pot/slow cooker liners.  Plastic bags that pull right out after cooking, no scrubbing!



Tomatoe soup and grilled cheese sandwiches / Breakfast for supper / BLTs (place bacon on rack in a pan or on broiling pan wtih drip tray and place in cold oven bake at 400 for 20 minutes, don't have to stand over hot stove / meatball subs using frozen italian meatballs, hunts spaghetti sauce (.79 to $1) on buns topped with cheese / Clam or corn chowder / shephard's pie.

Cornbread salad is an easy quick one that lasts about a week so it can be made a couple days ahead of time. I do this and bring home and empty bowel every time. I also add a can of white shoepeg corn. http://www.recipeusa.org/Salads/Cornbread%20Salad%2012903.htm

Shoepeg Corn Salad - 2 cans white shoepeg corn drained, 1 lg bellpepper, 1 lg onion, 1 lg tomatoe chopped, 1/2 cup mayo, S&P, Chill. Make a couple days ahead of time. Can double or tripple recipe.

Have recipe for Italian chicken roll ups like cordone blue with ham, cheese, italian breadcrumbs, olive oil that you bake and can slice or serve whole, make ahead of time or serve cold after baked.

Also Chicken roll ups that you do with chicken, green onion, cheese, lemon peper and roll up in crescent rolls, mix remaining with cream chicken/cream mush. and bake.

If you have company you need to throw a breakfast casserole in fridge for breakfast next morning, just bake and serve.

CHICKEN RUEBEN
Recipe for 4 boneless chicken breast so go from there. You can dice the chicken. If you boil the chicken and debone, cut back cooking time some, just to melt. Place raw chicken in pan, Drain 1 15 oz can saur Kraut, spread on top, Pour 1 small bottle thousand island dressing over top, cover, bake @ 350 x 30 min, uncover, cover with slices swiss cheese (or other), bake uncovered an additional 5-10 minutes. Dressing takes away sour taste.

CHICKEN NANCY (?) Don't recall who the heck nancy was.

6-7 boneless skinless chicken breasts (or chopped)in the bottom of a sprayed casserole pan. (Season with poultry seas. option) 1 slice of swiss cheese on top of each breast. Mix 1 can cream chick & herb soup mixed mixed w/ 1/2 cup dry sherry OR Milk (I use milk) pur over chicken. Spread pack "peppridge" ?SP farm stuffing mix (dry) or Stovetop Cornbread Stuffing…and put a little of the seasoning packet on the chicken as well)drizzle one stick of melted butter over top and bake at 350 for 35-45 min or until chicken is done.
