This is what I do....

Put in crock pot, just covered with water, with 1 can cream of mushroom soup, and 1 packet dry onion soup.  When you take then roast out, voila!  Your gravy's already done!  I like to make my mashed potatoes without peeling them.  I do everything the same way, just leaving the skins on.  It gives them more flavor.
