use frozen carrots in soups/stews/roast
I always use frozen carrots and celery and onions in my soups, stews, roasts, gravy, etc. You can either thaw them in the fridge (probably the upper part of yours) or in the microwave before throwing into the pot...otherwise start them at the beginnig of the recipe so they have a chance to get a head start over everything else and thaw that way. freezing veggies is a great way to 'use' them before they go bad. we don't eat a whole bundle of carrots or celery before the go bad so when i know they are getting close i chop them all up and freeze them. same with bananas for banana bread and the fixings for salsa. :)

cheesy potatos

We make cheesy potatos with ham;


Layer thinly sliced potatos, thinly sliced onions, swiss cheese, and cheddar cheese in a baking dish.  Bake on 400 til potatos are soft and cheese is melted.  Very simple but delicious! Goes wonderfuly with ham...


I use chuck. I also cook it on top of stove
very slow with golden mushroom soap, a can of beer, potatos, carrots, and onions. Get it boiling and let it simmer for 3 hours or so.

burned the crap out of my belly with mashed potatos

I was just stiring instant potatos and then somehow it jumped on my belly and now I have this 2-3 inch mass of skin that has blisters, some of which have popped, and this one 2 inch round lesion that just looks gross.  I probably should have gone to the hospital, but since I have no money I just treated it over the counter with antibiotic ointment.  Has anyone done this before?  If so what did you use?  It is painful!!!!  I bought this lidocaine stuff, but it hurts worse.  At least it is healing!!!  I am a dum dum!!!  Those potatos were out to get me darnit!!!

Boston Pops does a great job at this, or moreso the Boston Symphony Orchestra (BSO). The Pops was originally started by Arthur Fiedler as kind of a modern approach to the old long-hair style. I go to see the "Pops" whenever they are in town, I love them! The more sophisticated is the BSO or Boston Symphony Orchestra. Anything with Beethovan's Fifth and Nutcracker is dear to my heart. That's all I can do for you right now, not a classical buff but love large symphony orchestras and the Pops is just that with an ordinary person's flair.

and yes, they do get excited, but can be calmed down relatively easily.  Both of mine are very protective, lovable, love to be snuggled with, love to play fetch, just all around good dogs.  It sounds like the owners have not trained the dogs at all.  It also sounds like they may not know what a heat is until they are into the messy part. 


Some dogs will sense when a female is getting ready to go into heat and go nuts and some don't.  I took my male Boston to my MIL about 3 weeks ago and she has a female yorkie.  He would not leave her alone for anything.  We finally just separated the two until we left.  About 2 days later, she called to let us know that she was in heat (thankfully my dog is neutered!).

I am a dog lover to the nth degree.  I love all dogs.  Or so I thought.  My brother-in-law and sister-in-law were going out of town and called and asked if I would dogsit if they brought them over.  I was hesitant because they tend to get on my nerves when I am around them (the boston terriers not my BIL and SIL).  I said I guess.  So here he comes bringing them and they arrive wide open jumping on me and all up in my face, both of them.  I have a beagle of my own who is the ultimate laziest and low key dog you will ever know.  I also have a pit bull who is the kindest gentlest giant ever.  They are both well behaved and have never acted like those dogs do.  The minute my pit bull smelled her he went and was really sniffing her back end more than a dog usually would like she was in heat or something.  So my husband said she isn't in heat is she?  My pitbull is a male.  My BIL said I don't know.  My husband said she lives in the house with you. What do you mean you don't know.  He said well she shouldn't be in heat.  So we blew it off.  Well these dogs drove me nuts.  I mean nuts.  While working at my computer one sat and kept trying to jump in my lap while I was working and would dive up and hit my arm and of course cause me to mess up.  I was furious. I was on the verge of throwing the dog outside.  But it was storming so I didn't.  Then when I went in the living room to take a break and watch TV a few minutes one jumps up in my lap of course and when I went back to work I noticed blood on my pants.  I said oh great she was in heat.  I was ticked off.  I called my BIL and no answer.  I didn't know what to do.  So I loaded them up and took them home to their house where the back door was unlocked and left them with plenty of food and water.  I will just go let them out periodically.  I will be wasting my gas but oh well.  It is about 10 mintues away.  I just had to vent about these annoying little dogs.  I would have never dreamed there was a dog that I didn't like.  I can now say there are 2 dogs I don't like.  What are your experiences with boston terriers? I think it is the fact they won't sit down and are constantly jumping in my face and on my head that makes me annoyed.

Once I mentioned I liked boiled eggs. Everyone was so mad at me, there were 36 sitting in the middle of the table at dinner! Eat up!

not originally from the south either and cannot for the life of me figure out why anyone would eat these things (yes, I tried them once).

I'm gonna watch the Law and Order CI/SVU marathon. HA.
(avoiding the superbowl entirely, can't decide who to root for, and besides L@O marathon rocks) with a side of pizza and pepsi! Life is good.
Carrots.
Both my dogs adore carrots. Makes a great snack, cleans the teeth. Especially good for the one who acts ravenous all the time but would get pudgy if I let her.

My vet also recommended carrots but warned me that most dogs won't eat them. Fortunately my dog loves them more than raw hides. I just wash them off and break them in half or thirds.

Place baby carrots on a cookie sheet (one with sides), drizzle with olive oil, sprinkle with salt and pepper


Roast in hot oven until fork tender...about 30-40 minutes...yummy and easy!

Peas do too, another of my favorites right along with the oranges, bananas and grapes I have in the fridge. Sigh. Guess I had better get a book on low sugar cooking since I will be taking high doses of corticosteroids again real soon. That will certainly send my glucose into orbit.

Emeril says to put the eggs in the pot with the  cold water, and wait for it to boil, when it's a rolling boil, shut off the stove, and cover the pot for 13 minutes - and voila!!  Perfect hard-boiled eggs!!

Yes! The simpler the better, to me. Hellman's mayo, chicken breast boiled, cut up sm
just add as much mayo as you'd like - I don't use that much. Salt, pepper, and cut up red or green grapes gives it a little tang and sweetness. It's the first to go every single time at a party.

Also, be creative with the breads you use - kaiser rolls, french bread, etc.

Thanks for reminding me. I am going to boil some chicken right now and have that for lunch!

Pig Roast
I just went to a pig roast for my brother-in-law's wedding reception. It was a lot of fun. They had gotten married by a Justice of the Peace and has the reception (pig roast) a few months later. It was very causal just like a huge family barbecue. Have a great time.

Can I ask what type of cut makes the best roast? I love pot roast but every time I make mine in the crockpot it comes out tough! I think I've tried just about every cut there is !
here's one from foodnetwork...5 hrs to roast
SLOW-ROASTED PORK SHOULDER
2 heaping tablespoons black peppercorns
25 cloves garlic, (about 2 heads) peeled
10 whole cloves
3/4 cup vegetable oil
1 bone-in pork shoulder, (about 7 pounds)
Kosher salt, as needed
White distilled vinegar, as needed


Preheat the oven to 275 degrees F.
In a food processor, combine the peppercorns, garlic, and cloves and puree. While the motor is running, drizzle in the oil until a paste is formed. Using a rubber spatula, scrap the garlic paste into a small bowl.


Place the pork butt on a work surface and season all over generously with salt. Rub all over with the garlic paste. Place in an oven-safe roasting bag and close with a twist tie. Place in a large roasting pan, and cook until tender, about 5 hours.

I'm thinking of doing a goose Christmas Eve - will be a first though.  Usually do spiral hams, but I get one for the days while the kids are off instead and do the prime rib for Christmas Day and usually have shrimp cocktail as well.

Are you browning/searing it before you do any cooking with it?  That sometimes can make a difference - even if you're going to put it in the crockpot or cook it in the oven.  Try searing it in a pan with a little bit of olive oil and then putting it in the oven or crockpot.  This gives it another layer of flavor with the carmelization on the outside, but it also helps keep the juices in.


 


I'm cooking a roast in the crock sm
that I took an envelope of dry onion soup mix, and two cans (hated to spare 'em) of Coke over the top.  It has been in the crock all day for me to whiff, hmmmm....  Needless to say, I can't wait to see what it tastes like.  I hope hubby and the kids like it!  I do not usually use my crock, but I got this great crock pot recipe cookbook last week from the library, well, I think I'll renew the book....  There are actually recipes for cakes in there, too!  Could you imagine a chocolate cake with pudding in the middle that you've cooked in your crock pot all day?  The book is called Fix It and Forget It!  I love to cook, but when there's lots of typing to do, the quick stuff comes in handy-dandy!  lol  That steak and "stuff" you guys are talking about sounds great!

Son was on a camping trip this weekend and had Lithuanian pork roast.  Anyone out there have a recipe? He loved it!

I believe it said round roast on the sticker-the hunks I buy are around 10.00 apiece with absolutely no fat. My husband loves them. I put it in the oven frozen and cooked it all afternoon on low. Threw two small cans of V8 juice, a whole onion, some garlic and pepper. I thickened the juice with flour a little Gravy Master to darken the juice so it wouldn't be red and put in my potatoes, turned the oven up to 350 and everything was done and piping hot for hubby at 4:30. I had 1 slice, he ate the rest. Now, is that fair? LOL.

I have an eye roast recipe that's easy

Eye Round Roast (average size)


Sauce:


1 tbl crushed garlic (or a few cloves if you use fresh)


1/4 c veg oil


1/4 c of soy sauce


2 tbl of vinegar


1/4 c of honey (i've also used brown sugar, but that burns easy)


1 tsp of ginger


Mix the sauce and pour it over the roast.  I've also seared the roast before adding the sauce and then cook in oven around 350 or you can do this in a slow cooker.


The sauce is tasty and I think the vinegar tenderizes the meat.  I'll slice it down when it's down and add the slices back to the sauce.



What kind of cut? Saying "pork roast" is like saying sm
"roast beef". How you cook a pork roast depends on whether it is a butt, a shoulder, a pork loin, a sirloin. All of them are to be cooked in a different manner.

I do mine with tomatoes, basil and a clove of frash garlic and just a tad of oliver oil. I wrap that in foil and put it on the grill. I make this with red potatoes (slice partway open and put some butter inside, wrap in foil and grill also). I usually steam some green beans to go along with it, but this is a throw it on and forget about is for 45 minutes. Not great for those thighs but tastes heavenly!
Roast Beef and Sauce in Crock Pot

Any kind of roast, but works well with eye roast.  You can pan oil quick fry it to seal in moisture, but I have cooked this without pan searing as well.


Stir together, 1/2 cup soy sauce, 2 tbsp ground garlic, 1/4 cup of oil, 4 tbsp vinegar, and about 1 tsp of ground ginger.


Pour over roast and cook in the crockpot.  Depending on the size, I would do high for a while, and then down to low.  About 8 hours or so.  I've made this both in the crockpot and in the oven, so time varies.

Not so great for dieters, but heck, every now and then a little diet cheating is good.  Toast up some bread, shred the roast over it, top with mashed potatoes (the real ones!), douse in brown gravy - instant comfort food.

in with the seasoning packets. It comes with seasoning and the bag for about $2 usually. I buy whatever cut is on sale, put it in the bag with the seasoning, straight to the hot oven and add veggies in a few hours. Always, always tender and falling apart no matter what cut. I have tried the crockpot too, but mine is never good and tender that way.
