 maybe you could look into books or internet sites with make-ahead meals that you freeze.  Personally, I make extra burgers on the grill in the fall and freeze for the winter--just microwave.  Someone else here once mentioned cooking extra bacon and then freezing it--BLT.  Spaghetti meat sauce freezes pretty well.  Also, it is time-consuming, but I can/preserve beef stew and some other things (mind is a blank) that I just have to heat up and just add rolls or frozen fries or something.  And don't forget to make a soup with those veggies before they go bad. For something fast, I like quesidillas (?).  I'm getting hungry.  Hope others will chime in with better ideas for such a busy lady like you.  BTW, I think your hubby is lucky to have someone like you, who is willing to keep his stomach happy even though you are so busy yourself.
