Broccolli Cheese Casserole

This is a family favorite, and the only thing DH will touch that has mayonaisse in it. Very rich!

Preheat oven to 350.

1 box frozen chopped broccolli
1/2 c. mayonaisse
1/2 c. grated sharp cheddar cheese
1 egg, beaten
2 Tbsp chopped onion
1/2 can cream of mushroom soup
salt & pepper
Ritz crackers

Cook and drain broccolli. Combine everything except the cheese and the Ritz crackers. Pour into greased baking dish. Cover with cheese and crumbled Ritz crackers. Bake at 350 for 35-40 minutes.

Does anyone have an egg, sausage and cheese casserole recipe that does not include bread, croutons or crescent rolls? I found one the other and thought I printed it but did not. Now I can't find it again. Thanks!

Squash casserole
Here is one I get harrassed to cook every Thanksgiving, it is really good.

Squash Casserole.

2 pounds yellow summer squash.
3 grated carrots.
1 good-sized onion, chopped
1 can cream of celery soup.
1 small bag Pepperidge farm herb-stuffing.
1 egg
1 8 oz container of sour cream.
1 cup grated cheddar cheese.
1 cup melted butter.

Slice and boil the squash gently but don't cook it to death. (Squash is always better if you slice it up, salt it and let it sit out about 30 minutes before cooking). When squash is done, drain water and mash with a fork. Add the chopped onion and the carrots. Put in beaten egg but temper if first so you don't get scrambled eggs. Then add the can of soup and the sour cream mix well, add cheese Put in enough Pepperidge farm to your liking, I would guess I start with about 2 cups. Mix well. S & P to taste. Put in lightly greased 13 x 9 pan. Take about another cup of Pepperidge Farm and put it in melted butter, this is the topping. Or sometimes I just put plain Pepperidge Farm and put the cheese on top instead of in the dish. Bake at 350 for about 35 minutes.

 

 

Potato casserole
This is my funeral potatoes recipe which does contain cheese, but I see no reason why you can't adjust a recipe to your preference. I do it all the time when recipes have ingredients that I don't like. I'm thinking you could replace the cheese with cream of mushroom soup or cream of potato soup. Go for it. Don't be afraid to make a recipe your own!

* 6 medium potatoes, boiled
* 1 pint sour cream
* 1 cup cheddar cheese, grated
* 1 bunch green onions, chopped
* 2 tablespoons butter
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 2 tablespoons milk

Ooeygooey casserole (sm)

I came up with this when we were building our house.  We both were working jobs, as well as working on the house, and I just threw some stuff in the pan and it worked!!


Ingredients:


 


- One package frozen southern style hash browns (the cubed kind)


- One can each cream of mushroom soup and cream of chicken soup (the small cans)


- One package shredded cheese of your choice


- One sleeve Ritz-style crackers


- One half stick butter or margarine


- 2-3 cups of broccoli florets (enough to make a layer).  I use frozen.


- One package ready-serve bacon or leftover ham.


- Salt, pepper, garlic powder to taste.


 


Oven: 375 preheated.


 


Pan:  9 x 13 baking dish, sprayed with non-stick.


 


Layer as follows:  Potatoes, salt, pepper, garlic powder, mushroom soup and cream of chicken (the small cans don't quite cover the entire thing if you use just one, so I alternate and then go back and "mush" it around a bit), then half the cheese, then the broccoli.  Add the ham or bacon. 


 


Melt the butter and crush in the sleeve of crackers.  Add the rest of the cheese.  Blend well and crumble over top of casserole.  Cover with foil.


 


Bake at 375 until center is bubbling.  Take foil off for last few minutes to brown up top.  I am guessing that it takes about 60-90 minutes, as I just kind of throw it in and pull it out of the oven when it is done. 


 


I get more requests for this from folks than for anything else I fix.  It will last for days, and can be done with leftover meat.  I would imagine turkey or chicken would work just as well as the pork.

Hashbrown casserole?

Hasbrown Casserole

Mine is very easy.  You need:


1 bag cubed frozen hash browns 2 lb size


1/2 stick margarine


8 oz sharp cheddar cheese shredded


1 can cream of chicken soup


1 can cream of mucshroom soup


16 oz sour cream


1 c milk


1 small chopped onion


salt and pepper


Thaw the hash browns for 2 hours or overnight in fridge.  Melt margarine and pour over hashbrown in a large bowl and set aside.  In a separate bowl mix soup, sour cream, and milk.  Mix soup mixture into hashbrowns.  Add cheese, onion, and salt and pepper to taste.  Bake in a greased (I use margarine) 13 x 9 pan at 350 degrees for about 1 hour 15 minutes, more or less depending on the oven.  Cover with foil to bake.  Let cool for at least 15 minutes before eating, will thicken up as they cool. 


Almost everyone likes these.  They're great to take to a potluck too.

Baked Corn Casserole

Baked Corn Casserole



  • 1 can creamed corn
  • 1 can whole kernel corn
  • 1 large onion, chopped
  • 1 medium bell pepper, chopped (I don't like)
  • 1 (2 oz) jar pimiento, chopped (I don't like)
  • salt and pepper, to taste
  • red pepper, to taste
  • 2/3 cup milk
  • 1 egg, beaten
  • 1 cup cracker crumbs 
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter -- melted

Combine all ingredients in order given; mix well. Pour into greased 2-quart ovenproof casserole.  Bake at 350 for 1 hr.


Your pineapple casserole sounds
Yummy. Here is the one we always have.

2 can pineapple tidbits (drained)
1 C. sugar
2Tbsp flour
1 C. shredded cheddar cheese
Ritz Cracker crumbs
1/2 stick butter

Mix pineabble, sugar, flour, and cheese. Put in casserole dish (spray first) cover with cracker crumbs and pour melted butter on top. Bake at 350 for about 30 minutes. We have this every Easter and always will.

Chicken casserole

3-4 boneless chicken breasts
8 oz sliced mushrooms
1 C shredded swiss cheese or mozzarella
1 1/2 C stuffing (Stove Top in can)
1 can cream of chicken soup
1/2 can of white wine or chicken broth
1 stick butter

Cut up boneless chicken in bites. layer in 9 x 13 pan. top with sliced mushrooms, then shredded swiss cheese. mix together soup and wine/broth and pour over top.
sprinkle stuffing over everything. pour melted butter over and bake at 350 for about 45 minutes

You can mince or grind down the pecans rather than chop 'em if you think that'll work for your guests.  Cat...

INGREDIENTS



  • 4 1/2 cups cooked and mashed sweet potatoes
  • 1/2 cup butter, melted
  • 1/3 cup milk
  • 1 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter
  • 1 cup chopped pecans



DIRECTIONS



  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
  3. Bake for 25 minutes in the preheated oven, or until golden brown.


 


EASY beef casserole
Use 2 pkg. of Jiffy cornbread mix and mix according to directions.  If you don't have that in your area, it is a 'sweet' cornbread mix.  Brown 1-1/2 pounds of g. beef and mix in bowl with some mild salsa or 14 oz. can tomatoes, chopped, and a can of pinto beans.  Pour that in your casserole dish and then cover with the cornbread mix.  My 3 year old twins love it.  If you just use the tomatoes you could add some chopped onion to the beef when you brown it.  Just bake it for about 20 minutes or until the cornbread turns golden brown.  this is great with a salad or green beans
Either casserole or ziplock omelets
Breakfast casserole (make ahead, then bake)

1 lb sausage (any flavor)
6 eggs
2 cups milk
teaspoon salt
teaspoon dried mustard
6 slices of bread (cubed)
shredded cheddar cheese

Brown and drain sausage.
Whisk eggs, salt, mustard, then add milk and whisk.

Combine sausage and bread in a greased 9x9 baking dish and pour in egg/milk mixture. Add shredded cheese on the top. (This can be covered and refrigerated for baking later)

Bake at 350 degrees for 40-45 minutes.

Or, Ziploc omelets (prepare fixins' ahead, then everyone makes their own)

Cheeseburger and fries casserole
Made this earlier in the week and my guys loved it

1.5 lbs ground beef
1 small onion chopped
1 can cream of mushroom
1 can cheddar cheese soup
16 oz frozen french fries
1 lb grated cheddar cheese

Brown ground beef and onions then add soups and mix thoroughly. Add salt, pepper, garlic salt to taste. place in 9x13 pan and top with fries. Bake in 375 oven for 25-30 minutes until fries start to brown. Top with cheese and return to oven for 5-10 minutes until cheese is melted.

To lighten this up, use lean ground beef, healthy request soups and low fat cheese.
Breakfast casserole sides.
1. Biscuits with assorted jams and preserves, perhaps a sausage gravy boat.
2. Baked cheese grits or fried grits.
3. Cinnamon rolls/assorted pastries.
4. Blueberry or orange-cranberry muffins.
5. Hash browns or potatoes O'Brien.
6. Sausage patties.

Here's my favorite breakfast casserole

No bread, croutons or crescent rolls --


1 lb of ground sausage with peppers and onions


1 bag of shredded hashbrowns (get the ones with peppers/onions and save yourself some work)


8 eggs beat with 1/4 c of milk, salt & pepper to taste


Layer hashbrowns first.  Pour egg mixture over.


Combine 3/4 can of cream of mushroom or chicken soup, 1/4 c of milk, and 4 ounces of sour cream.


Add browned sausage to the above soup mixture and 1/2 c shredded cheese.  Layer over eggs & hashbrowns.


Refrigerate overnight.  Bake at 350 for 30 minutes.  Take out and add 1/4 c of shredded cheese and return to oven for an additional 15 minutes.


It's not as complicated as it sounds.  My husband and I can whip this up in about 20 minutes.  It's better the second day when we just reheat it because it sets up better.  You can serve it with salsa if you like.  We got this off of allrecipes.com and just tweaked it to our personal likes. 


easter dinner - pineapple casserole
2 eggs
1/2 c sugar
3 T. flour
1 can Dole crushed pineapple with juice
1 stick butter, melted
6 slices bread cut into small cubes

Mix eggs, sugar and flour together, add can of pineapple with juice. Pour into (spray PAM) casserole dish. Mix together bread cubes and melted butter and put overtop. Bake 350 for 60 minutes. If bread is becoming too brown, put foil over it toward the end of the baking time.

i bought some refrig croissants and forgot to get the ingredients for the rest of the receipe i had -- and they need used right away.  I have hamburger or chicken available...thanks!
DOUBLING STRING BEAN CASSEROLE sm

Has anyone ever doubled Stringbean casserole?  I look on the internet and could not find a recipe. I usually make it in to separate casserole dishes but I would rather just make it one but I don't want to waste the ingredients if it does not come out right.

Be careful using it with a frozen casserole. I bought
the casserole. It said to bake it on a cookie sheet, so I pulled out my stone. The stone broke into 3 pieces during cooking, so I learned never to do that again. I have 2, one is black because it has been used so much, but I love them. I just don't put anything frozen solid on them anymore, including biscuits. I am probably paranoid, but after the first one I have broke like that, I feel it is just better safe than sorry.

Not to butt in but what's great about green bean casserole?

I made it once and it went in the garbage. It was horrible. Every year I tell hubby I'm going to try it again (jokingly of course)  and he always says "The h--- you will!!!"


So much for that.

southern style potatoes frozen (ore-ida)
1 can cream of chicken soap
8 ounces sour cream
1 stick butter
1 package mild cheddar cheest
mix all ingredients and bake for 45 minutes

Then if you want to add a meat such as ham or bacon you can do that.
mac 'n cheese

Here's the one I use...it's yummy...enjoy!


1 box, about 8 ounces or so, of elbow mac noodles


shredded cheese (I use the 4 cheese blend usually) about 2 cups...


1 small can evaporated milk


1 can cheddar cheese soup


1 egg


salt & pepper


Preheat oven to 350 degrees.  Cook noodles until mostly done, but not all the way;drain.  Mix in a large bowl the cheddar cheese soup, evaporated milk, and egg.  Add salt and pepper to taste. Add the noodles in with the soup mixture (I usually cool my noodles a bit before adding by running under cool water for a minute or 2).  Don't add too many noodles or the mac 'n cheese will be dry.


Spray a round, deep casserole dish with nonstick spray.  Add a layer of noodle mix, top with cheese; repeat with another layer of noodle mix and top with remaining cheese.  Don't skimp on the cheese either!  Add about a cup to each layer, depending on how much you like cheese (we love it)!  Bake for about 30 minutes or until the cheese is melted and the casserole is bubbly. 


It's seriously delicious.  It's the only recipe my whole family uses for mac 'n cheese!

LOL, I made homemade mac and cheese a couple times and the kids didn't like it!  But they love the Kraft.  My 12 yo niece recently told us that when she was little she though Grandma made the best mac and cheese in the world.  Yep, it was Kraft in the box.  I wouldn't sweat it.  In our family we just always make mac and cheese for the little kids and they're happy.
mac & cheese
Cook 1 lb macaroni according to directions on box and put in crock pot.

Add one stick margarine.
Add 1/2 lb white American cheese.
Add 1/2 lb Cooper Sharp cheese.
Add 1 quart milk.
Add salt and pepper to taste.

Warm in crock pot at least 4 hours (2 on high and then 2 on low).
Unfortunately . . . Mac and Cheese out of a box :)
I can't cook. I had never even cooked before (except warmed up left overs in the microwave). I cooked mac and cheese out of the box, but left the burner on (high) after getting rid of the water and half the noodles stuck to the bottom of the pan. It was a disaster. Needless to say . . . my husband cooks most the time now (though I have learned how to cook in the meantime).

The best frozen mac and cheese is from Trader Joe's. It's absolutely decadent! Don't be fooled by the fact that it's frozen. Yum.

Macaroni and cheese sm
I enjoy a really good mac and cheese but have to give it up due to high cholesterol, etc. Once in awhile I cheat and have plain mac with butter, salt and pepper (don't tell my cardiologist). There is a restaurant chain in the NE area called Hard Rock Cafe. I don't know what they put in it, it's very rich, but sooo good. I use Annie's for my grandkids and they love it. I prefer the good old rich cheesy kind with a nice browned breadcrust topping. Oh gosh, I feel pregnant with craving right now! Too old for that!
or may be mac and cheese. I make my own
using elbow macaroni, velveeta cheese, stewed tomatoes and bread crumbs on top with a dot of butter.

Cook the mac first, melt the cheese in macaroni, add tomatoes, put bread crumbs on top and then bake.

Usually have biscuits or rolls with that and a salad.
My SIL swears by mac & cheese

YUCK -- but my kids like noodles -- the egg noodles in turkey broth.  They also like the turkey drumsticks and the wishbone.  They love Stove Top stuffing, but not homemade stuffing.  They don't eat much of the mashed potatos or gravy.  They love deviled eggs.  Are my kids weird? 


One year, I thought I'd make candied sweet potatoes for the kids, thinking they'd like ooey-gooey, make-my-teeth-hurt sweet, but turns out I was wrong.  They didn't touch it. 


Truth be told, most kids don't eat much on holidays.  Too much excitement I think.  Try to make sure they have a good breakfast, then let them pick what they want to eat.  I usually ask my kids to try 1 thing, just a small amount.  When they come back later, I give them a turkey sandwich (if they like turkey) or PB&J.  Don't stress yourself out over what the kids are eating.  They'll be fine.  It's only 1 day.


Need to know about cheese buying
I do not buy cheese but have 2 people on my list for presents this year that I would love to get some crackers and cheeses for. Do most cheese need refrigeration? I would think some would last longer than others, right? I can make this a 1 stop shop at Trader's Joe so need some ideas, anyone?

I have my grandmother's recipe that we grew up on of baked mac and cheese. So much better than the box varieties.
Off topic - mac and cheese
I must be living under a rock, but I was watching the Food Network, and they were talking about restaurants that serve mac and cheese pizza.  I might have to try it, it sounded pretty good, but I can't think of anything more fattening - unless you add bacon to it.
I second the motion on the mac & cheese!
And the 2nd or 3rd day, I like to take a slab of it and brown it in butter in the frying pan. Great for any meal of the day, even breakfast!
Philly Cheese Steak
I saw them making Philly Cheese Steak on the Food Network the other day and they used New York steak.  Kind of expensive, but it looked really good.  They said you could freeze it and then slice it thin while it was still slightly frozen (to make it easier), but I can't see why you couldn't have the butcher do it. 
can cubed cheese be frozen?

I have a big cheese platter left over from a party this weekend.  It consists various cubed cheeses.  Did anyone ever freeze cheese?
