it is known for being fat scraps and other nasty bits that they can't use elsewhere...ears, snouts, trotters, head cheese type stuff, all the pig junk. Even a whiff of it is enough to turn my stomach, but then I don't eat pig, cow or chicken. It is all so gross to me!
