bottom rack is best or middle rack which seems rather far away from the heat.

5 Alternative Meats To Consider

I believe I'll pass on all of them.


Meat consumption usually means beef, pork, or chicken. Mutton and venison are common also. My favorite Indian restaurant avoids both beef and pork for religious reasons, but sometimes offers goat as an alternative to chicken. In the past few years, rising food prices and concerns about the environment are leading people to try new and different sources of meat. Here are five you may have never thought about.


1. Raccoon



Raccoon meat is cheap if you know of a local trapper. In Kansas City, raccoons go for $3-7 dollars each, and a whole animal will feed five adults. Preparing raccoon meat isn’t easy or quick. Frozen meat must be thawed, then parboiled, then stewed. The cooking time is measured in hours, but those who have tried it love the taste. That is, if you can get past thinking of raccoons as vermin, roadkill, or cute little masked bandits. You’ll find one reminder: trappers remove the head and three paws, but leave one paw behind to prove the animal is not a dog or cat.


2. Camel


Camel meat is quite common in the Middle East, and is reportedly quite tasty. Australians are now encouraged to try camel meat as the continent’s million-plus wild camel population is growing out of control. Camels are destroying the delicate ecosystem of the desert, and they burp huge amounts of greenhouse gasses into the air. You can find camel recipes if you look, but beware that some recipes are more serious than others.


3. Squirrel


Eating squirrel is nothing new in America. Just a few years ago, advice came from the University of Kentucky that people should not eat squirrel brains because they may contain a variant of Mad Cow Disease. The rest of the squirrel is fine, if a little stringy. Now squirrel meat is being promoted in Britain due to an overpopulation of gray squirrels. The American invaders are edging out the native red squirrels. Brits who resisted squirrel meat for centuries are now patting themselves on the back as they eat gray squirrel and do their part for the balance of nature. You’ll find plenty of recipes for squirrel online.


4. Yattle


Yattle is the name given to a crossbreed of yaks and cattle. Yak meat has less fat than beef, because yak fat is near the skin, where it helps keep the cold-climate animal warm, whereas beef cattle distribute their fat throughout the meat. First-generation yattle are the result of mating between a yak and a cow or bull. Male yattle are sterile, but females can breed with bulls, resulting in a 25% yak ancestry for second-generation yattle. Yaks, and yattle, consume less food than cattle, and produce valuable fiber to make sweaters. Yattle meat is supposedly indistinguishable from yak meat.


5. Kangaroo


Kangaroos are both plentiful and meaty, with a low percentage of fat compared to beef. They are also less damaging to the environment than cattle. However, kangaroo meat is slow to catch on in Australia. After all, most nations don’t eat their national symbol! Some European countries consume more kangaroo meat per capita than Australia, possibly because of Mad Cow Disease fears. Environmental groups encourage people to eat kangaroo because the animals do not burp or fart and therefore do not add greenhouse gasses to the atmosphere -strangely the opposite reason people are encouraged to eat camel meat. Kangaroo meat is used in sausages, stews, steaks, burgers, and sandwiches.


I use middle rack unless large cut that needs more room.

Not if you are planning on baking
Wax paper will melt wax into your foods if you are baking. That being said, if you are making a cake you can butter the pan, both sides of the wax paper, and place the wax paper on the bottom of the pan wax side down, putting your batter on top.  You can also use wax paper to steam. If you are planning on baking using direct oven heat (where the paper will be exposed directly to the enviornment around it) I would not suggest it.
Baking Stones?
Somebody gave me a brand new baking stone from Pampered Chef. I know people love them but I have never been able to figure out what you do with them except for cooking a frozen pizza... maybe...?

I LOVE my baking stones and use them all the time. The best thing to cook on them at first is something really greasy, like using crescent roll dough and make something with them. They are a greasy dough, so they help season the stone. I have a recipe for veggie pizza that uses the roll mix. The more seasoned your stone is, the better your food turns out. I make pizza, cookies, french fries. ANything that can be baked on a cookie sheet (within reason) can be baked on a stone. It makes killer calzone and pasties. Experiment and have fun with your new stone.
Baking gifts

Do any of you give baked goods during the holidays?  What are some of your favorites?  I get tired of making the same ole bread, cookies, and chocolate covered pretzels every year.


I will say that last year I put peanut butter between 2 Ritz crackers and then covered them in baking chocolate (white and semi-sweet) and they turned out really well.  I put sprinkles on the white ones (they showed up better than on the semi-sweet ones).

when I wasn't paying attention.  He even put in parsnips - my favorite part.

You can also grind them up into a powder to add to soups and things that you would normally add tomato paste to. It works out great!

Try a little bit of baking soda on a washcloth
Just remember that the rubbing may cause a little redness, but i think it will help with the kool-aid.  Been there, done that...
I had a mouse get in my double oven many
years ago and get electrocuted on the wiring. Needless to say the kitchen smelled like something dead for DAYS. I tore the room apart and never found it. When we took the front electrical panel off 3 months later to replace a report, there it was! Looked like it was crucifed. All bones and they all fell out all over the stove. Yuk.
Dutch Oven Cooking
Hi - Glad to see you here again. I still missed your piggy "baby" - likes to hide, I guess. Cold here too. It is really easy to cook in the fireplace or on an iron stand in your back yard or a hole in the ground. I will email you some recipes and look at all the fun you will have! Nothing tastes as good as dutch oven food! Get ready for a new dress size! Your husband will be your slave if you feed him this food, I swear. Have to know, how much is wood a cord out there where you are? It is 492.00 here, and that is horrendous. We used to cut our own and it was basically free with sweat labor.
How to keep baked potatoes hot out of the oven?
Our church is having a potluck Februrary 21 where the men prepare the main dishes . DH had decided to bring baked potatoes with all the toppings . He will probably bake about 40 potatoes . How can they be kept hot ? I thought of lining a roasting pan with towels & covering it with its lid . Any suggestions?
I have both - gas cooktop & electric oven sm
My oven is a wall oven, and I am so spoiled by it that it could be a make or break factor in whatever house we buy after this one. I love the fact that the stovetop is gas with the ability to cool down a pan immediately when cooking without having to move it. I had never had a gas stovetop before this and it did take a little getting used to, but I love it now and would never go back to electric without a fight.

Lately I've been forgetting to turn OFF the oven!

Sunday we had dinner at 5ish, when it was time for bed at 10 and I shut all the lights off, I noticed some extra lighting on the stove...it was telling me the temperature I had set it to and that it was still on!...and it's a gas oven too!  I think I've done this about 5 times this year now.  Wicked, wicked not so s

I have a bread machine and love it. It allows for both bread mixes and scratch ingredients. The bread tastes delicious, too.


Can someone tell me what temperature you bake cod fillets at in the oven and for how long. It is
about 1-1/2 pounds.  I have a hard time with fish knowing when it is done.  Do you put it on a baking sheet.  I want just plain old fish just butter and lemon on it.

I have the boneless chicken, the skewers, the teriyaki sauce, how can I do this in the oven without ruining everything or starting a fire? Kinda stuck in the snow here and making the best of preparing a menu. Also, if anyone still has the hashbrown casserole, I have all the ingredients (I think) but lost the recipe amts., etc.

Does anyone have that recipe?  I am making chicken tonight and need something that I can throw together and stick in the oven while I'm working.  I haven't cooked in a couple of days and the natives are getting restless for a home cooked meal!
Food safety question - left chicken in oven overnight (sm)
I baked two pans of chicken last night and one of them I forgot and left in the oven all night.  It has not been touched or opened since being cooked.  If I reheat it today do you think it is ok to eat or would you be afraid of food poisoning???

I have no concept of "surface is HOT." It stunk up the place and ruined a new set of oven gloves, but it was okay. I am very careful of it now, because a HOT SURFACE light means it is HOT.
