What are you cooking for 4th of July? Recipes encouraged please!

Almost Gobbler Day. Who is cooking and who is going out to dinner? Myself cooking. (sm)

We usually have everyone bring a dish of some sorts.  Large family, probably about 30 plus.  Set up 3 extra tables in the garage for smokers and cardplayers and have a great day stuffing ourselves. 


Looking for different side dishes, suggestions anyone?

4th of July
My mother-in-law and sister-in-law are coming for a few days. I'll be entertaining all weekend. Then, Tuesday is my B-day! I'm off until Wednesday.

This is ONLY because of 4th of July holiday...sm
and not unheard of in the industry. You really should call your acct mgr and ask for a secondary acct. My acct mgr has been VERY accommodating. Before long all accts will be booming again, as mine has picked up today.
I think the worse are USUALLY after July - SM
Of course that doesn't mean there won't be any but they are usually more and rougher ones after it's been hotter for longer, etc. One more thing you could think about is what we did - book one on the GA beach or South Carolinas - it always seems like they don't have as many or as strong. We've booked at Jekyll the end of June b/c it is very family oriented there and more private plus less severe storms in general. Good luck. I've been worried about the same things
Is July 4th a holiday for you?
I don't think the company I work for observes this holiday.  After checking my handbook, it looks as if it is not even on the list.  We have to alternate holidays and then only have to work a half shift, so it is not so bad.  I was just checking to see if it was my holiday and was surprised to see that it is a regular day.  I'm sure I saw it when I started with them last year, but it just didn't register with me.  We had Memorial Day and will have Labor Day.  I'd rather have July 4th than either of those two holidays.  Is anyone else having to work that day as a regular day?

to keep all your little critters safe if you're like me and have an animal that is scared of loud noises.  There are lots of animals that get injured around this time of year (especially in shelters) from fear of the noise that fireworks create.  There have been dogs that have actually jumped through windows trying to escape from the noise.


Not trying to bring anyone down, just reminding everyone to keep your little ones safe.  I have to give Rescue Remedy to my dog to keep him calm because he is so frightened of loud noises (thunderstorms especially).

I've been doing this since July 2004
and I consider myself comfortable with my current accounts.  Seasoned?  No way.  You must be doing a great job for your Editor to say that.
My co. was begging for MTs to work July 4th -

- so I stayed home, and can see a ton of work listed, yet my job list is EMPTY! 


I hate when this happens!  They cry for backlog to be caught up, yet we can't get to it to do it.  Meanwhile, ANOTHER holiday wasted in front of the PC waiting for work.


 


How can this be? First date supposed to be mid May, NOT July?

well since I am in PA and just about wet all over and working too - I am doing it easy - ribs in a slow cooker, with 2 cups ketchup and 2 cups dr. pepper - very very good and can let me have the day to do other things - Besides we are expecting rain again.

Jerk seasoning can be used on most meats.  You can buy sauces or make your own rub.  Look for either Caribbean or Jamaican jerk.  KC Masterpiece makes a good spiced Caribbean jerk marinade.  It's got molasses, soy sauce, onion, garlic, spices, allspice, nutmeg, cinnamon, red pepper, hot pepper, and pineapple puree.

Easter recipes sm
It is very difficult for me because my children married different faiths and it used to be that we (before they married) would go to church and then to a restaurant (our favorite) as a special treat for family style soup, salad and main course. Of course, the "new" family had to kill this plan since the other side did not like our Church. Too bad. I started to cook brunch after service which included: Coffee or tea, lots of different juices, bacon, ham (spiral), fried potatoes (home fries), waffles (finally woke up to buying prepared and frozen), lots of syrup, butter, fresh strawberries and blueberries, some favorites of the grandchildren (one liked cantaloupe, another's favorite was my homemade sugar cookies, another liked my peanut butter cookies). I cook for days but it's worth it. Know how I got rewarded? The "other" moms got so jealous, they started to offer "brunch" instead of the traditional dinner (ham and all the trimmings, sit-down style).. I was frustrated at this, but I still try. Why don't people realize that "life is temporary" - whatever works for you. Since someone "stole" my brunch idea, I offer nice foods still, at whatever time their schedule (allows) them to show up; not necessarily breakfast, but some rented "childrens movies" with no pressure. As long as we build it, they will come. However, my brunch was sooooo popular, I'm glad someone "stole" it from me. It's kind of like having MT account "stolen" from you, it's not the same quality, but you have to realize that copying you is a true compliment and you should enjoy it. BTW (by the way) I have a bit of Polish in me, so I thoroughly enjoyed the kielbasa aspect of Easter, I slice it up and cook it first in a little water to get rid of the grease. Then I recook it using currant jelly and slice it, put wooden toothpicks in there and let them munch. Easter should be fun, no matter what religion you are in or out of, "He" would just like you to have fun on His special day, or more especially a family day, never mind what you believe in or choose not to believe in. It's a fun day!!!

cooking in crock pot right now
Either beef stew meat OR a chuck, whatever.  One can cream of celery, one can cream of mushroom and one can french onion.  Don't have do do a thing.  Delicious

Don't think my guests would appreciate a "tofu turkey". I will do the whole traditional meal and those who choose not to eat the turkey will still have plenty.
How do you get rid of cooking smells?

I've about had it with cooking any beef or pork at all.  Even cooking with hot oil.


I cannot get the lingering odors out.  I wash the pots and pans, put up the leftovers immediately, clean the stove and all surfaces but it just lingers.


Does anyone have a solution?


There are some good crockpot recipes out there, especially

if it's hot and you don't want to use the oven.  I do a "golfer's special".  Line a cake pan with tin foil, put the roast in, and add cut up carrots, potatoes, onions, and celery.  Sprinkle it with onion soup mix or beef gravy mix, close the foil, then bake until done.  It can also be done in the crockpot.


You can cube your roast to make shish kebabs slathered in BBQ or some other bold tasting sauce.  Skewer new potatoes, onions, mushrooms, squash, red peppers, and whatever other veggies you like.


You can cut up the roast either before or after cooking, stick it in the crockpot with some beef broth, let it cook all day, then serve as French dip sandwiches on steak rolls with au jus.  Fries, salad, or chips on the side.


Sometimes I just sit here and Google for recipes when I'm bored and can't think of what to cook for dinner.  Type "rump roast recipe" on Google without quotes to see what else comes up.  You can narrow your search by adding "BBQ" or "crockpot".

Ever try cooking a meal in someone else's kitchen? sm
You know how to cook, but have a tough time finding where everything is kept in that kitchen so it takes a while longer.  You could cook the same thing in your own familiar kitchen in half the time.  This goes for MT, too.  It takes a long time, even for those of us who have been transcribing half our lives, to get used to new formats, new work type codes, new voices, and learning idiosyncrasies for each and every dictator.  It takes time--a few months or more.  Be patient, and the line counts will surely add up as you become more familiar with the account.

OT: Girl singer on the July 4th shows - did anyone catch this show on the Fourth?

I'm trying to find the name of one of the performers on the evening of the Fourth who sang God Bless the Child (I think it was on the show where the President attended).  Does anyone know who that singer was?  I missed the first half of her song and they did not announce her name again at the end.  I thought it might have been Brandy but I haven't kept up with celebs lately.

Meat cooking is harder, IMHO
Remebering my childhood as an animal eater, I think it is harder cooking for meat eaters and way more expensive than vegetarian foods.
Take turns w/ menu (and cooking and cleaning..)
I grew up in a house w/ a six-pack of kids and if you didn't like what was for dinner, too #$$# bad, will give it to your brother lol.
