Vidalia Onion Cornbread (from Paula Deen)


1 box Jiffy corn muffin mix


1/2 stick butter


1 large Vidalia or other sweet onion, chopped


1 egg, beaten


1/3 cup whole milk


1 cup sour cream


1 cup grated Cheddar cheese, divided


1/4 tsp salt


1/4 tsp dill weed (which I leave out)


Preheat the oven to 450 degrees F. Spray an 8-inch square baking pan with vegetable oil cooking spray. In a medium saucepan, melt the butter and saute the onion until tender, but not browned, for about 3 minutes. Remove the pan from the heat and add the muffin mix, egg, milk, sour cream, 1/2 cup of the cheese, the salt, and dill weed. Stir to combine. Pour into the prepared pan and top with the remaining 1/2 cup cheese. Bake for 30 minutes, until set and a toothpick inserted into the center of the cornbread comes out clean. Allow to cool slightly before cutting into squares.


I double the recipe and bake it in a 9x13 or even 11x15 pan and it comes out great. And to keep the cheese from getting too dark, I add it the last 10 minutes instead of at the beginning. So yummy!


Second favorite is corn casserole, very similar to the onion cornbread.


Corn Casserole


1 pkg Jiffy corn muffin mix


8 oz sour cream


1 cup shredded Cheddar cheese


1 egg


1 can whole kernel corn (do not drain)


1 can cream-style corn


1 stick of butter


Melt the butter in an 8x8 baking dish in a 400-degree oven. Meanwhile, mix the corn muffin mix, juice from whole kernel corn, egg, and sour cream until well mixed. Add remaining ingredients and pour into dish with butter. Stir slightly to mix in the butter. Bake 30-45 minutes or until set in the middle.


Again, I have doubled this recipe and baked in a 9x13 pan; however, do not double the butter or it is too greasy.

My husband is a hunter.  Venison is a staple in most diets in the south. 


I have noted a few posts regarding pork skins.  They are actually a actually listed in the Adkin's diet as a snack food.  You can find them at any flea market in the south. 


I grew up in Illinois (St. Louis metro) and many of the same foods we ate there are common here.

Just so you know we absolutely love having it - sm
The previous owners put it in, actually converted a wood burning fireplace to gas, after the power went out for a few days one winter. So in any power outages we always have heat at least even if it means camping out in the family/great room (it is a combo family/living/and kitchen all in one big room with the fireplace in the center and a half cathedral ceiling. My DH absolutely loves that fireplace. I can always tell when he has it on though as the MBR gets cold, and this is where I work. But again, try it out, you will love it. I raved so much about ours my dad went out and got one too, he loves his and he used it to heat his family room (very large 50 x 30) which was on a separate thermastat (split level house). He has since moved though and his new house has just a regular fireplace in the living room, which I doubt he will convert though as he does not really use that room, its more his wife's territory.

I just returned from my 4th cruise a week ago today. I've enjoyed them all, but my favorite by far was the week we spent at an all inclusive in Tulum, Mexico. My next vacation will be anogther all inclusive. The only way to go.

I don't know what we'd do without it. It was well worth the money in my opinion. In fact, we're going away for three days tomorrow and we already have it set up and ready to go. Saves a lot of arguing and map reading.
I absolutely love it. We have to drive
to the next state to go. I think it is just the excitement of being there. Thank goodness I don't have a lot of extra money, or I could see myself there all the time. We go 1 or 2 times a year. I have met lots of interesting people, players and dealers. When we go we usually spend the night, so it is a little get-away. I don't win very often (Did hit for $150 on a slot once)--I only take an XX amount with me and leave the debit card at home. The only problem I have is not realizing the time--one time I was going back to the room, leaving the BF at the table, and looked at my watch and it was 4:30 a.m.

Send as often as I can yet no one sends to me. I am a card sender, get well, sympathy, little notes, etc. What is WRONG with people. I find in this business you are also very isolated but friends do it as well. I sympathize with you. Cards are important and I hang onto mine forever and re-read them again and again.

I absolutely love my work, but myfamily is priority

I chose to come home for two reasons, I absolutely loved doing MT work and I had a child who stayed with my mother during my working hours.  At that time, I worked in-house. After figuring the line count I was getting compared to cpl versus hourly rate, I realized that coming home was the way to go, not to mention more time with my baby (age 3). My baby is now 10 and I have another baby almost 3. I still love being at home, and I sure would not change being home for anything in the world. I have been able to see every ball game, help with every homework assignment, volunteer in the classroom and read every day with my children. When I have jobs that need to be transcribed ASAP, they know it is time for me to work and usually watch a movie or play a game together.  I still manage to get my days work done, both work and home and still spend time with my children and husband, and nothing in this world could ever change my mind about staying at home.  I am not saying it is a picture perfect world, there are bad days mixed with the good, and I have suffered burn-out and went back to work outside, but quickly found my way back home.  It is not all peaches-n-cream, but I do love my work and at least I know who is raising my children and taking care of the housework, not to mention who is looking at the dirty laundry.  To the other women out there who have raised children and done MT work at home, I praise you..you have two job titles: MT business manager and home business manager.  For Missy, well....maybe you just need to have a baby for yourself to find out why it is important for many to stay home and raise their babies.  You do know...some children go to daycare and the parents later find out there was a case of neglect or abuse with their children.  PRAISE TO THE SUPERMOMS!!

Start getting lists from rest of family by end of Sept. into Oct and usually have everything done, bought, and wrapped by Thanksgiving!!!!!!!!!! By doing that I can sit back and just enjoy the beauty of the season.

I tried to leave by telling the guy the little one needed tending too...and it wasn't like the odor said I was lying about it! He just kept talking. The allotted time was over and we reminded him of that several times. As he did not want "his chance" to get away and wouldn't stop talking, I was left with no alternative.

You say classless and I bet you were one of the ones miffed for giving up 3 hours of your time when the deal said you only had to stay for 1-1/2 hours. We fulfilled our obligation. The rest...well, was... in the diaper. At least I didn't ask him to dispose of it!

There is a joke among used car dealers that becoming a TS salesman is what happens when a used car salesman gets burned out!

It's a business arrangement. We fulfilled our obligation and the offers always say you are under no obligation to buy...just fulfill their criteria. When the salesman overstepped his bounds and wouldn't take no for an anwer, he made the situation more uncomfortable than it had to be. Ms. Manners would probably chastise the TS salesman for not taking no for an answer, me for changing the child in front of him (there were no bathrooms where he gave the tour), and you for the holier-than-thou attitude. Classy indeed!
Onion odor - eeewwww!
I did a really dumb thing.  On Sunday I cut open a big purple onion and used a couple of slices in a dish.  Then, wanting to be frugal and not throw the rest away, I wrapped the rest of the onion in plastic wrap and stuck it in my fridge, on a plastic shelf in the door, face-down.  Okay, I'm 55 and have almost never used onions.  I only bought a big one because they were out of the little pearl onions.  Now, two days later, my fridge smells to high heaven!  I washed out the little shelf I had put the onion on with soap and water and it didn't do anything to help.  So far, all I've been able to do is put a big lump of baking soda on the shelf and hope a lot.  Any ideas?

Slow Cooker Barbeque Sandwiches
INGREDIENTS
1 (3 pound) boneless chuck roast
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
1 (18 ounce) bottle barbeque sauce ~(I use KC Masterpiece BBQ sauce.)


DIRECTIONS
Place roast into slow cooker. Sprinkle with garlic powder and onion powder, and season with salt and pepper. Pour barbeque sauce over meat. Cook on Low for 6 to 8 hours. Remove meat from slow cooker, shred, and return to slow cooker. Cook for 1 more hour. Serve hot.

This also taste good warmed up the next day.
Sometimes I chop a little onion and add to the salmon with fresh

parsley.  Sometimes I will add just a touch of mustard.  Any way I make them they seem to turn out good.  I usually just make them with egg white instead of the whole egg, but sometimes will add the egg yolk as well.  I love salmon and make it frequently for myself as well.

Not so great for dieters, but heck, every now and then a little diet cheating is good.  Toast up some bread, shred the roast over it, top with mashed potatoes (the real ones!), douse in brown gravy - instant comfort food.

Crab in Tomato Sauce with Pasta






CRAB IN TOMATO SAUCE WITH PASTA  


1 lb. blue crab meat, flaked
2 tbsp. butter
1 tbsp. olive oil
1 med. onion, coarsely chopped
2 cloves garlic, minced
2 tbsp. flour
1 (16 oz.) can whole tomatoes, drained and quartered
1 c. chicken broth
1/2 tsp. salt
1/4 tsp. pepper
2/3 c. Parmesan cheese
Spaghetti or linguine, cooked and hot


In a large skillet, combine butter and olive oil and saute onion and garlic over medium heat for 2 to 3 minutes, add the flour and cook and stir until flour is well blended. Stir in broth, tomatoes, salt and pepper. Bring to a boil, reduce heat, cover and simmer 10 minutes. Add crab meat and cook for 5 minutes.  Toss hot pasta with 1/3 Parmesan cheese, then top pasta with crab-tomato sauce. Pass remaining cheese.

Makes 4 to 6 servings.

Pasta with zukes, carrots, onion, garlic, basil...sm

Tampa here - Cuban sandwiches, deviled crab, Mojo
pork, stuffed potatoes. My husband was born and raised here in the area while I am from Arkansas, and while I have not been to southern Florida (Miami), I have not found another area that has Cubans as good as I can get in Tampa. The only thing we had in my hometown that I've not found elsewhere was a patty melt at the Dairy Queen made with sourdough bread. Sadly they tore it down many years ago and the new store closed a few years back.
Mojo criollo marinade - citrus, garlic, & onion sm

I can get it at my local grocery stores and use it on pork loin or chicken, and I have even found a fresh sausage with the flavor already added to it. Very good with yellow rice, black beans, and peas.


Easy! I grew up on quick tomato sauces.
It's very simple, and I do it without a recipe. I do my "light" sauce without meat in a very large pan, but you can do it in a medium to large pot.

I heat the pan over medium heat, I put several "glugs" of olive oil, probably a little less than a quarter cup. Toss in a clove of finely diced garlic (or more if you like), and about a half of a large onion finely diced. Saute for just a bit on medium heat to get everything softened and translucent, but not browned. Toss in tomatoes, either 4-6 cups of diced peeled and seeded fresh tomatoes, or one large can of crushed tomatoes. Add two or three leaves of chopped fresh basil, or about a tablespoon of dried basil. Let it all simmer for about 20 to 30 minutes (longer if using fresh tomatoes), and that's the very basic tomato sauce. I add salt to taste only at the end after it's reduced a bit. You can cook it longer if you like it thicker.

I vary it based on what how I'm using it. I sometimes add mushrooms or peppers, or a little hot pepper flakes to spice it up. If I'm using it with meat, I also add a little wine. Occasionally, the tomatoes might be just a little on the acid side, and then I'll throw in a pinch or two of sugar to cut that.

I don't use much sauce on my pasta or on meat, just a little bit to coat it and a bit more to top it to make it pretty. My grandmother and all of our Italian neighbors used these sauces pretty sparingly by American standards. I think in this country, we tend to really slather on the spaghetti sauce, so this recipe may not make as much as you want. If you want more, you can easily double or triple it.
I shred the beef and saute with a little finely diced onion and butter,
then add a bit of flour to make a roux and brown that lightly. Then warm milk to "cream" it. I like a bit of good paprika, sometimes the hot variety, at the end.
You can grow tomato plants upside down from hanging pots, too.

Mixing the two sauces togeter gives it the right amount of garlic and veggies. Our family is Italian on both sides, but we all agree for a quick jar sauce instead of homemade, this does the trick! YUM

If children find out on their own, they think they have figured out the great mystery of life, if someone tells them (especially an adult), they are taking away a precious, magical childhood time. My daughter believed up until she was 11 . . . and now that she and my almost 11-year-old son have figured it out, they think THEY have uncovered a great mystery!!! They think it's funny, actually. My 7-year-old still believes and he will until he is at least 10, if I have anything to say about it. That's like talking to them about faith in my opinion. That's the parents' responsibility

What if he does this behind closed doors (very likely if he struck out at the little one in public) when mommy isn't around?

What if he isn't their dad (or is) and he's abusing them but she doesn't know it?

As a mom, I would definitely want to know if someone struck my kid. Especially if I was a single mom (which I have been) and this guy was a boyfriend who was responsible for caring for my kids while I was at work or otherwise occupied. I would never leave them with him again, I could tell you that for certain.

Doesn't really matter what their personal situation is. The fact is, the kid was struck for no good reason and the jerk should have been called on it.

If he made a stink or if she made a stink, SO WHAT, follow them and get a license plate number then turn them in!

A few months ago I was at a class I take at the YMCA and one woman was telling us how her daughter-in-law had a miscarriage. She was saying how hard it was and finally I spoke up and said I too had miscarried. After I said that, at least 4 other women (out of a group of maybe 10-12) admitted they too had miscarried. I was stunned. I had no idea how many of us there were. Knowing I wasn't alone might have helped when I was going through it.

On the other hand, if anything good came of it, I think it made me a better mother. I cherished every moment of my children's lives and took none of it for granted.

Men like that feed off of control. My ex did the same thing. Just pull your boots up! It'll be okay. Talk to your family (parents? siblings?), see a lawyer (don't tell your husband), and look at getting into counseling. I've been exactly where you are and I know what you're feeling. It's awful, but the sooner you get free, the better you'll feel and the better off your children will be.

You have the right idea!!  Where I live, Hard Rock Cafe had their 10th year anniversay Saturday night.  My husband and I and a couple of friends (who are about 5 years younger than I am) decided to go.  Rich music history here in my neck of the woods.  When we walked in, the young girl standing at the hostess desk looked at us and said "Just to make sure you know it is our 10th anniversay and we will be having loud rock music tonight in case you want to eat dinner somewhere else". I asked her why she told me that because she didn't tell the couple that was in front of us. She said "well, I thought at your age you might not like it."  I couldn't believe it.  That's why we were there, to hear the bands that were playing.
