Beans, beans, beans
Beans taste really good with cheese and picante, and there are so many spices and spice packets, bouillon cubes are great too. Stock up on salt and spices!
Dried Beans

I always used to use those for bean soup for our family reunion. About 10 years ago, I made it and the beans were still crunchy!  First time I had that problem. I had to throw it all out (20 quarts) and start all over again, yet only had 1 day until the reunion, ran out and bought canned beans. Worked. Now I use canned beans instead.

Never knew what happened, but I'd rather use dried beans because of the cost and shelf life.

speaking of coffee -- beans that is,

does anyone dip their c. beans in baking chocolate for snacks?  I heard you can do this, but wondered if they are real hard, too strong or just plain tasty this way???

Well I was just kidding about chewing on the beans!

But I am very happy that you found something strong enough - I guess espresso should do it.  I have only had espresso once myself and it was bitter, but I understand that making it correctly is a kind of an art form.

I don't think I have had Cuban coffee, but I'll sure keep my eyes peeled for it.  I love to try new things.

I buy Dunkin Donuts Beans in their store....or...sm

Sometimes I go to the grocery store and buy Colombian beans (I love Colombian coffee, among many others) to grind - Brothers brand is really good, believe it or not.

Also, in Dunkin Donuts while you're buying a nice cup of their coffee, they sell beans, their beans - and they had a sale - buy 1 pound, get the next one like half price.....I cannot remember, as it was a couple of months ago...but I bought 2 pounds and still have one in the fridge to grind.

I NEVER grind in the store.  I have a little $30 grinder I picked up somewhere - Target?  Wal-Mart?  Can't remember that either.....but I grind a container full (like a week's worth) at one time.  You can do more or less - it's personal choice there, or you can grind daily - it's that simple a thing.

But I'll tell you the truth - no matter that I'm grinding Dunkin Donuts beans - it NEVER tastes as good as buying it at their store... I don't know what it is - I use Half N Half (like they do) and it still pales in comparison to the ready-made Dunkin Donuts coffee in their store...

could just be a psychological thing here going on in my head about that.........*lol*

Happy Java hunting :)

Enjoy that time off!
Potato salad, baked beans.

I've cut out pasta and never gave beans.
PBJ's?? I know she likes peanut butter but thought it was probably bad for her.

So now I have a diet of hamburger-rice and PBJs. She's gonna have to fight me for the food dish!

I agree, beans and all legumes are a great source for.......sm
plant protein and fiber. Great option for vegetarian.

This is a great beanice dish:

rice
beans (any kind)
onions (chopped small)
olives
turmeric
spices

Fry a little in olive oil or canola oil, then cook in water, 1:2, or 1:1/2, depending on kind of rice.

You can substitute beans with lentils or chickpeas, or put all 3 together....

Beans for supper...sounds like an experiment in our house. nm

Truffles, the other day you suggested chewing on coffee beans but
I think I found what I really need today and I had some Cuban coffee at a little shop up the street. I am in total love! The guy wanted to know if I knew what it was before I bought and told him drank some in a smaller cup in Santo Domingo, did not think it would be any stronger and goody for me, just hit the spot. The guy suggested my getting an expresso maker and might just do. I did not get around to chewing on the beans, though.

mac 'n cheese

Here's the one I use...it's yummy...enjoy!

1 box, about 8 ounces or so, of elbow mac noodles

shredded cheese (I use the 4 cheese blend usually) about 2 cups...

1 small can evaporated milk

1 can cheddar cheese soup

1 egg

salt & pepper

Preheat oven to 350 degrees.  Cook noodles until mostly done, but not all the way;drain.  Mix in a large bowl the cheddar cheese soup, evaporated milk, and egg.  Add salt and pepper to taste. Add the noodles in with the soup mixture (I usually cool my noodles a bit before adding by running under cool water for a minute or 2).  Don't add too many noodles or the mac 'n cheese will be dry.

Spray a round, deep casserole dish with nonstick spray.  Add a layer of noodle mix, top with cheese; repeat with another layer of noodle mix and top with remaining cheese.  Don't skimp on the cheese either!  Add about a cup to each layer, depending on how much you like cheese (we love it)!  Bake for about 30 minutes or until the cheese is melted and the casserole is bubbly.

It's seriously delicious.  It's the only recipe my whole family uses for mac 'n cheese!

mac/cheese
Try adding some dry mustard. It was in one recipe I had and it really helped.
Cheese

any and all kinds

Mac&Cheese
LOL, I made homemade mac and cheese a couple times and the kids didn't like it!  But they love the Kraft.  My 12 yo niece recently told us that when she was little she though Grandma made the best mac and cheese in the world.  Yep, it was Kraft in the box.  I wouldn't sweat it.  In our family we just always make mac and cheese for the little kids and they're happy.
mac & cheese
Cook 1 lb macaroni according to directions on box and put in crock pot.

Add one stick margarine.
Add 1/2 lb white American cheese.
Add 1/2 lb Cooper Sharp cheese.
Add 1 quart milk.
Add salt and pepper to taste.

Warm in crock pot at least 4 hours (2 on high and then 2 on low).
Unfortunately . . . Mac and Cheese out of a box :)
I can't cook. I had never even cooked before (except warmed up left overs in the microwave). I cooked mac and cheese out of the box, but left the burner on (high) after getting rid of the water and half the noodles stuck to the bottom of the pan. It was a disaster. Needless to say . . . my husband cooks most the time now (though I have learned how to cook in the meantime).
mac n cheese
The best frozen mac and cheese is from Trader Joe's. It's absolutely decadent! Don't be fooled by the fact that it's frozen. Yum.
tell her to get mac&cheese or another side--sm
she doesn't HAVE to eat mashed potatoes. Pizza gets tiring all the time. She may be nice, but she doesn't sound very flexible. Enjoy whatever you decide on. have fun!
...instead as I had no cheese, though. Pumpkin it is! :) nm

Macaroni and cheese sm
I enjoy a really good mac and cheese but have to give it up due to high cholesterol, etc. Once in awhile I cheat and have plain mac with butter, salt and pepper (don't tell my cardiologist). There is a restaurant chain in the NE area called Hard Rock Cafe. I don't know what they put in it, it's very rich, but sooo good. I use Annie's for my grandkids and they love it. I prefer the good old rich cheesy kind with a nice browned breadcrust topping. Oh gosh, I feel pregnant with craving right now! Too old for that!
or may be mac and cheese. I make my own
using elbow macaroni, velveeta cheese, stewed tomatoes and bread crumbs on top with a dot of butter.

Cook the mac first, melt the cheese in macaroni, add tomatoes, put bread crumbs on top and then bake.

Usually have biscuits or rolls with that and a salad.
My SIL swears by mac & cheese

YUCK -- but my kids like noodles -- the egg noodles in turkey broth.  They also like the turkey drumsticks and the wishbone.  They love Stove Top stuffing, but not homemade stuffing.  They don't eat much of the mashed potatos or gravy.  They love deviled eggs.  Are my kids weird?

One year, I thought I'd make candied sweet potatoes for the kids, thinking they'd like ooey-gooey, make-my-teeth-hurt sweet, but turns out I was wrong.  They didn't touch it.

Truth be told, most kids don't eat much on holidays.  Too much excitement I think.  Try to make sure they have a good breakfast, then let them pick what they want to eat.  I usually ask my kids to try 1 thing, just a small amount.  When they come back later, I give them a turkey sandwich (if they like turkey) or PB&J.  Don't stress yourself out over what the kids are eating.  They'll be fine.  It's only 1 day.

Need to know about cheese buying
I do not buy cheese but have 2 people on my list for presents this year that I would love to get some crackers and cheeses for. Do most cheese need refrigeration? I would think some would last longer than others, right? I can make this a 1 stop shop at Trader's Joe so need some ideas, anyone?
Never had mac and cheese pizza, but
I have my grandmother's recipe that we grew up on of baked mac and cheese. So much better than the box varieties.
Off topic - mac and cheese
I must be living under a rock, but I was watching the Food Network, and they were talking about restaurants that serve mac and cheese pizza.  I might have to try it, it sounded pretty good, but I can't think of anything more fattening - unless you add bacon to it.
I second the motion on the mac & cheese!
And the 2nd or 3rd day, I like to take a slab of it and brown it in butter in the frying pan. Great for any meal of the day, even breakfast!
Broccolli Cheese Casserole
This is a family favorite, and the only thing DH will touch that has mayonaisse in it. Very rich!

Preheat oven to 350.

1 box frozen chopped broccolli
1/2 c. mayonaisse
1/2 c. grated sharp cheddar cheese
1 egg, beaten
2 Tbsp chopped onion
1/2 can cream of mushroom soup
salt & pepper
Ritz crackers

Cook and drain broccolli. Combine everything except the cheese and the Ritz crackers. Pour into greased baking dish. Cover with cheese and crumbled Ritz crackers. Bake at 350 for 35-40 minutes.
Philly Cheese Steak
I saw them making Philly Cheese Steak on the Food Network the other day and they used New York steak.  Kind of expensive, but it looked really good.  They said you could freeze it and then slice it thin while it was still slightly frozen (to make it easier), but I can't see why you couldn't have the butcher do it.
can cubed cheese be frozen?

I have a big cheese platter left over from a party this weekend.  It consists various cubed cheeses.  Did anyone ever freeze cheese?

Thanks

Wow..we always had grilled cheese too! Thanks for posting..sm
It is very hard to go to all the places that I once shared with my mom. I am trying to keep her in my heart and do all the fun and memorable things with my daughters. Everything I do seems to bring her close to my heart.. and makes me cry for her. Thanks again for posting. Take Care.

white cheese sauce

Our family frequents a mexican restaurant and they have this awesome cheese sauce.  Wonder if anyone has a recipe they use and would be willing to share.  I tried something yesterday evening and it was a disaster!

Take a couple of blocks of cream cheese and soften by mashing them up:

Season to taste with Greek Seasoning Salt. Add a little bit of chopped green onion and chopped black olives. Serve on plain crackers.

Sorry Chuckie Cheese that your life is not as
