INGREDIENTS



  • 4 1/2 cups cooked and mashed sweet potatoes
  • 1/2 cup butter, melted
  • 1/3 cup milk
  • 1 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter
  • 1 cup chopped pecans



DIRECTIONS



  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
  3. Bake for 25 minutes in the preheated oven, or until golden brown.

That's how my mom and grandma always made it, so I grew up eating it that way.  But the very thought of sweet pickles makes my hubby ill, so dill pickles it is for us. 


Have you tried baked sweet potatoes?
You prepare them exactly like regular sweet potatoes and you can either top them with butter or sugar and cinnamon. They are very good and I heard they are healthier too?


I made baked sweet potatoes for dinner last night
You cook them just like a baked potato. My 10 y/o daughter and I just like butter on ours. I love sweet potatoes though! I also have a really good recipe with apples and sweet potatoes in a casserole (see below). I brought it for Thanksgiving dinner last year and it was a hit! It's more tart than sweet and really delicious!

Apple-Sweet Potato Bake

3 pounds sweet potatoes
4 medium tart apples, peeled
1/4 cup lemon juice
1/2 cup chopped pecans
1/2 cup butter, cubed
1/2 cup packed brown sugar
1/2 cup honey
2 tablespoons orange juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger

1. Scrub sweet potatoes with a veggie brush under cold water. Pierce skin in several places; place on a baking sheet. Bake at 400 degrees for 35-45 minutes or until almost tender (I bake them a little longer cuz I like them pretty mushy). Cool slightly; peel potatoes and cut into 1/4 inch slices.

2. Cut the apples into 1/4 inch slices; toss with lemon juice. In a greased 11-in. x 7-in. x 2-in. baking dish, alternately arrang sweet potato and apple slices. Sprinkle with pecans.

3. In a small saucepan, combine the butter, brown sugar, honey, orange juice, cinnamon and ginger. Bring to a boil, stirring constantly. Remove from heat; pour over potatoes and apples. Bake, uncovered, at 400 degrees for 25-30 minutes or until tender.


Here's another recipe I make sometimes. It's called "Heavenly Sweet Potatoes" by Campbell's Soup.

Vegetable cooking spray
1 can (40 oz) cut sweet potato, drained
1/4 tsp ground cinnamon
1/8 ground ginger
3/4 cup Swanson Chicken Broth
2 cups miniature marshmallows

Spray a 1-1/2 quart casserole with cooking spray. Set the dish aside.
Place the potatoes, cinnamon and ginger in a 3-quart bowl. Beat with an electric mixer on medium speed until the potatoes are fluffy and almost smooth. Add the broth and beat until the ingredients are mixed. Spoon the potato mixture into the prepared dish. Top with the marshmallows.

Bake at 350 degrees for 20 minutes or until hot and marshmallows are golden brown.
Providing references when getting auto loan
I have to buy a car and the finance company (Capital One) requires 10 references. I don't know this many people. Has anyone been in a similar situation...what did you do?

I used to give people the shirt off my own back, and I learned the hard way to cut it out! It's good you can't help them--you'd be throwing away your own hard-earned resources if you did. Let them earn where they want to be. If these people truly did nothing to create their plight, why didn't they check out social services or Catholic charities months ago? 90% of the time a hard-luck story was created by the person telling it. Speaking for myself, my best life lessons were because I had to dig myself out of a world of I created my own self. Others deserve the dignity of doing that--and as someone already posted, it can be done. Just takes patience and self-discipline.

I know that my HUSBAND is the one who wanted our son circumcised and I am sure that it was not to psychologically damage him.

A common effect...sm
According to the Ohio State University Extension, it is because there was excessive preheating--longer than 5 mins.  I assume they mean while the tomatoes were being heated prior to being placed in the jar.  From experience, it does not affect the taste.  As long as the seal is tight, they should be fine.  Just shake the jar before opening.  Welcome to the wonderful world of canning!  Did you get tomato bits on the ceiling like I do every year? 
The new tax went into effect this week

Cigarette companies told the store I buy mine that they decided to put it in before its mandatory. Really nice of them. They just want to make that extra $$. Took the cost up $10 a carton and mine are generic.


PA wants to tax extra too, which would be another $5-$10. I would quit but I've tried to quit 6 times and now smoking MORE. Nothing worked.  In reality, though, I don't smoke that much. They burn away. I light up, start doing something, and next thing I know, it's down to the filter. That's worse than smoking IMHO.


I'm afraid to try Chantix. My son had horrible nightmares on it and I already have bad nightmares at times, so don't need to add to them.


I absolutely envy anyone that can quit. I will try again some day, but right now. I don't think I want to go through the withdrawal I go through. BTW, I've been a smoker for almost 50 years.

The theory is that Chris Daughtry went home because his fans became complacent, believing him to be bullet-proof. This may be what happened with Adam.

At the same time, this week, a news story went out that there has been a major feud between Adam and Kris, who were former roommates in the mansion but had to be separated because of fighting. The feud purportedly stems from Adam being loud, pushy,gay,and big-city and Kris being a quiet, unassuming, conservative Christian from a small town. I don't know the validity of this but the story has been everywhere.

This would lead some fans who would vote against Adam for being either gay or pushy...I suppose to punish him.

Frankly, I could not care less what either of their sexuality is or what their personalities are behind the scenes, and I'm speaking as a conservative Catholic. I am rooting for Adam because he is who I would most like to hear on the radio and whose CD I would most likely buy, although to be honest, I've never bought a single Idol CD.

I really wasn't all that surprised last night.

The reason you have to slice them in half before you wrap the whole potato to cook it is because it is too hot to eat even hours later. By being already cut in half, no one burns their fingers and the potato instantly cools off once it is opened. You do not need to put them back in an oven once they come out.
I have not heard of that as a side effect
of the surgery. LASIK is surgery on the outer surface of the eye, and the lens that clouds in a cataract is deeper in the eye, inside a little capsule. I think the eye doctor is going to say it's unrelated.

How old are you, by the way?

a light sage green and light brown? Leave the ceiling white or off white. Or just do one wall with the sponge and the rest a light green or beige.
The ripple effect or Karma
I feel for the people who come to get advice or even vent and they get such negative comments when the person giving the negative comments does not know the entire situation. I once posted wanting to know if anyone knew of any self-help books for people who are in difficult marriages and how to feel good about yourself and all I received were posts saying divorce, take the kids and leave, etc, etc. I was not in a situation that would warrant leaving. But I too have read the posts below and there really are some terrible posts from people. I often think about a news story I heard awhile back about some lady who posted something on the internet about some girl and how she wasn't a nice person and didn't deserve to live (or something like that - don't know the exact wording right now), but this girl ended up killing herself because of that. When I see a post from someone who is down on themselves I try to post a positive message letting them know how important they are to the people who love them. I just don't understand why people get so much enjoyment out of posting "nasty-grams" and hurting others. I do believe in Karma and the Ripple effect and one day this will come back and bite them in the you know what.
You know, that was about the only side effect I did have was vaginal dryness, but that (sm)
seemed to have fixed itself over about a year afterwards and I have not had any problems since. Luckily, that is one of the easiest side effects because they make stuff like that even for women that are not post hysterectomy. :)
Need help regarding Potato salad?...sm

I have a problem.  When my children were young they never liked potato salad.  They always asked if I would make macaroni salad all the time with holiday meals.  Today my son who is a teenager asked me if I would make potato salad to go with the turkey and all the other holiday goodies.  He said he does like potato salad now. I have no clue how to make this as I have never made it.  Any recipes/help would be so greatly appreciated. 


 


 


Potato casserole
This is my funeral potatoes recipe which does contain cheese, but I see no reason why you can't adjust a recipe to your preference. I do it all the time when recipes have ingredients that I don't like. I'm thinking you could replace the cheese with cream of mushroom soup or cream of potato soup. Go for it. Don't be afraid to make a recipe your own!

* 6 medium potatoes, boiled
* 1 pint sour cream
* 1 cup cheddar cheese, grated
* 1 bunch green onions, chopped
* 2 tablespoons butter
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 2 tablespoons milk

It had the opposite effect on me, I couldn't even get through 1 week. I might be a fluke, though.

I like Grey's Anatomy too but never can remember when it comes on to record it. I have also seen commercials for Swingtown and that looks good but I can barely keep up with the little I record now. I hesitate to add to it. :)
Bake like a regular potato
They are good if you make them just like a regular baked potato too and just add butter, salt, and pepper. My husband also grilled them in foil this summer with butter and just a touch of brown sugar and they were great. I do not like the canned, fresh are MUCH better and less sweet from the start. I also saw a recipe for sweet potato chips in the oven. I haven't tried it yet and can't remember where I found the recipe but I'm sure you can Google it.
Bakes potato soup
I like to make baked potato soup. Bake 3 large potatoes or 4-5 small ones. Cut them in half, cool slightly, then scoop out the middle. While they are baking I takes some time to heat up some chicken stock with a bay leaf, garlic, black pepper, a little time. Sometimes I use boulion (sp?) if I don't have stock. Add potatoes to this. Heat to boil. Puree if you want or leave chunky. Add milk and cornstarch if you like it thicker or sometimes I use potato buds to thicken it. The amount of milk/chicken stock, etc. depends on how much fat you want. I used to use almost full milk or heavy cream but not any more. I just use enough to make it creamy now. Put in bowls and top with cheddar cheese and bacon. Sour cream doesn't work well. Really easy and quick (can "bake" the potatoes in the microwave if you want). I find that kids love it if you call it cheese and bacon soup. lol Usually for the bacon, I don't cook a new package but instead when I cook bacon for breakfast, etc. I save 2 or 3 pieces in the freezer each time. Then when I want some for soup, green beans, or salads it is available.

potato recipe for Easter dinner

1 package of frozen shredded potatoes.
1 pint of whipping cream
salt to taste


dump potatoes in a casserole dish, salt to taste, and pour whipping cream over top. bake 350 for about 60 minutes.--- susan

Baked ham question
This year I will, as usual, use brown sugar, pineapple and cherries on my ham.  But my question is, other than to have the yummie fruit to eat, how does it change the flavor of the ham since it still has the rind on it?  Just wondering.  I have tried taking the rind off before baking, but soon found out that was an effort in futility.  Hope this isn't something everyone but me knows!

Ok great cooks..need help with baked mac-n-chs!
We all love homemade baked mac-n-cheese.  However, I'm not doing something right.  I need your help!  I made one over the weekend and it was not bad, it was just really bland.  The only thing that really had any flavor was the cheese topping LOL  I am using the basic ingredients; noodles, milk, eggs, cheese, salt & pepper.  I am obviously lacking in the "flavor" department.  So who has a great TASTY baked mac-n-cheese recipe??  Thanks!
Baked Corn Casserole

Baked Corn Casserole



  • 1 can creamed corn
  • 1 can whole kernel corn
  • 1 large onion, chopped
  • 1 medium bell pepper, chopped (I don't like)
  • 1 (2 oz) jar pimiento, chopped (I don't like)
  • salt and pepper, to taste
  • red pepper, to taste
  • 2/3 cup milk
  • 1 egg, beaten
  • 1 cup cracker crumbs 
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter -- melted

Combine all ingredients in order given; mix well. Pour into greased 2-quart ovenproof casserole.  Bake at 350 for 1 hr.

Baked French Toast
I made this Thanksgiving weekend for breakfast. You start it the night before so it can sit overnight in the fridge. It is so simple and quick, and is absolutely delicious! Everyone loved it!
Note: I sprinkled cinnamon on the top just before baking. Can't have French Toast without cinnamon!

BAKED FRENCH TOAST
Ingredients:
8 eggs
1 1/2 cups milk
1 tablespoon brown sugar
2 teaspoons vanilla
8 slices of 3/4 inch thick Italian bread, cut in half.
1/4 cup butter
1/2 cup maple syrup
2 tablespoons brown sugar

Directions:
Mix eggs, milk, brown sugar and vanilla. Pour half of the mixture in the bottom of a 13 X 9 pan. Lay the bread out in the pay and pour the rest of the mixture on top. Flip the bread over so that it's all coated. Cover and let sit in the fridge overnight.

Melt butter in a second 13 x 9 inch pan. Stir the brown sugar and maple syrup into the butter. Move your soaked bread into the pan with the butter mixture. Cook at 350 for 30-45 minutes, depending on desired brownness.

How to keep baked potatoes hot out of the oven?
Our church is having a potluck Februrary 21 where the men prepare the main dishes . DH had decided to bring baked potatoes with all the toppings . He will probably bake about 40 potatoes . How can they be kept hot ? I thought of lining a roasting pan with towels & covering it with its lid . Any suggestions?

Wash and cut in half each potato. Wrap in aluminum foil and bake. Leave the foil on. They will stay hot about 2-3 hours out of the oven. I have used this recipe for 100 people. Put the toppings on ice! It is always a hit!
Rolls, dessert (some kind of soft pie or chocolate pie). Instead of potato salad, maybe sm
mashed potatoes since they are edentulous. Green bean casserole was a great idea. Corn casserole too is yummy.

need whole baked turkey breast recipe sm

Hi  A few weeks ago I thought I saved a recipe from Shop-rite for a Whole Turkey Breast with sliced oranges on top.  I cannot find it and I cannot find a recipe similar to it online.  


Does anyone havve a good recipe for baking a turkey breast that will spice it up instead of just plopping it in the oven.   I am having my daughter's future inlaws for dinner   TIA.
